Thank you for this video! I canned my first tuna last year and needed a refresher how to do it. The only thing I did extra was a cold smoke beforehand. Its amazing!

How long is the tuna good for in the jar after this process is finished and does it need to be refrigerated or just kept in a cool dry place?

So you dont add water to pot while the jars are in there? How does it build up steam ?

@MrCrazyoneeye the steam in canning doesn't come from inside the jars. It comes from the water in the canner pot. This builds pressure as shown in the video which raises the temperature well above the 212F of steam alone inside the canner. THe liquid in the jars is from the meat cooking down. Thank you! But why are you removing the rings? I thought they reinforce the lid.

@kaihill3608 They are not needed once the jar is sealed. This way you don't have a lot of rings just sitting in storage. Those lids are not going anywhere unitl you pop them loose, usually with a can opener or spoon! haha Thank you for watching! What is better, raw tuna, or precooked tuna?

@luxs_en That's very subjective, haha. I prefer seared "Ahi" style with a thin sear on the outside, raw on the inside. However, You have to eat all your tuna up in a month or two or its gets very fishy in the freezer. Canning it makes it last for years and those are entirely different dishes you make with it.
