Pulled out a canned jar of this spicy chicken for taco's today. The taste was AMAZING. The chipotle peppers gave it spicy kick. Spicy but not hot hot.

Chipotle is hot sauce mixed with a little liquid smoke, enough when you see the right color, I tasted it, and then made it, for a friend that is Mexican, and he asked me where did I get it, I told him I made it, and he was surprised, he couldn't believe it.

I chopped some chicken breast this evening to can these up tomorrow evening after work. I can’t wait to try them. I don’t have Mexican oregano, I’m going to try it with regulars oregano, I hope it will taste as good as these look!

Your tattler lids appear to have the gaskets attached to the lid. Is this new, or did you do something we didn't see? Loved the Chipotle black beans and can't wait to try this. The beans were the third thing my wife and I ever pressure canned. We are working on the 20th thing to pressure can. We had two local restaurant suppliers open to the public since all the restaurants were closed. Picked up a case of pears (109), 50 lbs onions, 25 lbs red bell peppers, 50 lbs Yukon potatoes, 50 lbs red potatoes (Irish?), squash, zuccini, blue berries, 35 lbs carrots, 34 lbs butter and 10 lbs stick margarine. Did 27 pints pear relish, 42 quarts potatoes, 21 pints carrots, 12 pints of stuffed pepper mix, 12 pints Chipotle black beans, 2 quarts plus10 pints squash with onions, plus kidney beans, red beans and lentils. Now we are going to work on canning meats. Really enjoy your channel, especially the canning videos. Stay safe.

In the pictures you have posted of your canning, I've noticed that you have left the rings on the jars. Although I'm sure you do remove them after 24 hours, please be sure that beginners know to remove the rings and to not stack the jars to avoid a false seal. Love your channel. I've been watching for years!

How is the texture when you par cook then pressure can breast is it tender or well done and tough...i have just started canning in the pressure canner and have only done ugly chicken which i cant keep on the shelf Thanks luv your videos

Do you cook them in the pressure cooker for a different amount of time than you would for raw chicken? How long do you have them in the pressure cooker? Or is there a video you've done about this?

Doesn't the chicken get over-cooked if you do in the oven first, and then again in the pressure canner afterward? Trying to wrap my mind around the process.

You can do either way (raw pack or hot pack) for chicken. Some people call raw packed "ugly chicken" since it tends to form into a solid clump and has that goopy stuff that comes out of the chicken. The goopy stuff sticks to the jar and takes a little extra work to clean the jar. You can't add any broth or liquid to raw packed chicken - it makes its own broth (which is delicious - never throw it away) as it cooks. In previous videos Linda has explained why she prefers hot packed (pre-cooked) chicken - which is partly for looks and partly for the added flavor you can get by adding a broth. There may be more reasons. I have done chicken both ways and I think the hot packed actually had better texture, but plain raw packed sure is fast and easy.

@@lvbtm In my household, I cook the meat before canning it because the meat looks better in the jar and the jars are easier to clean after. There's no gooky residue left to scrub off as there is when I raw pack.. When I raw pack, I feel like I can get more chicken in the jars though...So, I guess it just depends on your preference. ♡

Linda, I have not canned in years. I canning chicken stew and am reading to only add about 3 quarts. I can not remember but I thought I used to cover the jars with water to about 1 inch above the top. What do you do???

@@donnas2375 I've now tried the par-cooked method after seeing Linda do it, and because it's chunked and only par-cooked it turns out such a great texture! Raw packed (ugly chicken) is good too and used for chicken salad, enchiladas, etc. . However, the chunked, par-cooked is a game changer. I have learned so much from Linda!
