Made this yesterday and felt so accomplished! So easy and they turned out great. Had some leftover dough and while baking the rest for dinner today, rolled some of it thinner and cooked it on the griddle... and it was like pita bread! Thanks for the recipe!

There are many different ways to make these muffins. Some people use egg as an extra binder to make the interior more cake-like. Sometimes the muffins are cooked on a skillet instead of the oven, but this increases the risk of having a undercooked interior ;)

I think freshly baked is always better than store bought. It's hard to specifically describe, but freshly baked has that "lightness" to it that you never seen to get with store bought muffins ;)

Newbie question :) I use warn water for yeast, then I melt butter to add... won't hot melted butter kill yeast? or do you let butter cool before adding? does it matter? I'd just really hate to waste 6 cups of flour and I have a bad history with yeast baked items :)

Letting yeast sit in any liquid, is called proofing. The purpose of doing so is to be sure the yeast is active. I would guess the same reason as I do,he didn't let the yeast proof because he may possibly bake often and he knows his yeast is not dead. I bake bread 3 to 4 times a day and I never proof my yeast, unless it's a special type of bread such as brioche in which it's critical. I have bread videos on my channel and most I do not proof the yeast :) hope this helps.

I know this question is way after the fact, but is that the closest to each other that they should be placed on the tray? They don't seem to need much room to spread, and they don't seem to get much browned around the sides, so they seemed rather distant from each other...?

Tip: Toast them and spread butter on then top with a selection of egg (scrambled and fried), bacon, fried tomato, fried mushrooms, beans and if you really want to live on the edge, black pudding or hash browns, to get that real English flavour
