Sometimes you gotta get creative! We're putting together a DIY mount for our Starlink internet & working together to position it on top of our A-frame cabin for best signal. Then, we spend a wonderful day with our son Parker playing in the snow because sometimes ya just need a snow day! Cheers...

PRETZEL RECIPE:
1. ¾ cup milk
2. ¼ cup water
3. 2-1/2 TBS sugar
4. 1 pkg. active dry yeast (2-1/4 tsp)
5. 2-1/2 cups all purpose flour
6. 2 TBS softened butter
7. 1-1/4 tsp fine sea salt
8. 5 cups of water
9. 1/3 cup baking soda
10. 1 egg yolk-lightly beaten
11. 1 TBS cold water
12. Coarse salt (optional)
1. In small saucepan heat & stir milk, the ¼ cup water, and the sugar over low until warm (about 105 to 115 degrees). Pour into bowl of stand mixer fitted with dough hook. Sprinkle with yeast; let stand 5 minutes or until foamy. Add flour, butter, and the 1-1/4 tsp sea salt. Beat on low 2 to 3 minutes or until combined, scraping sides occasionally. Beat on medium low for 6-8 minutes or until soft dough forms.
2. Turn dough out onto clean surface. Knead a few times by folding & pressing dough. Turning dough to knead, uniformly shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover & let rise in a warm place until double in size (about 1 hour).
3. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. Punch down dough. Turn out onto a work surface. Divide into 8 portions.
4. Roll & stretch each portion into a 30” long rope. If the dough does not want to stretch, cover & let rest for 10-15 minutes.
5. To shape each pretzel, form each rope into a U shape & cross ends over each other, then twist once. Bring ends down to bottom of the U shape, press to seal.
6. In a deep skillet or wide pot, stir together 5 cups of water & the baking soda. Bring to a simmer. Using a slotted spoon, lower pretzels one at a time into the water (10-20 seconds). Remove pretzels & place on paper towels. Arrange pretzels 2” apart on the prepared baking sheet.
7. In a small bowl, combine egg yolk & 1 TBS cold water. Brush pretzels with egg mixture. If desired sprinkle with coarse salt. You may also add jalapenos or desired topping. Bake 11-13 minutes or until deep golden brown. Cool slightly on a wire rack, serve warm.
EASY CHEESE DIP:
Hand shred 3 oz. medium cheddar cheese (3/4 cup). In a small saucepan, melt 1 TBS butter over medium. Add 1 TBS all purpose flour & whisk to combine. Continue cooking & whisking 1 minute. Slowly whisk in ½ cup whole milk. Bring mixture to a simmer, whisking constantly. Simmer 1 minute or until mixture coats back of spoon. Remove from heat, whisk in cheese until smooth. Season to taste with salt/pepper. If you like a lot of dip, double the cheese recipe!

After becoming empty nesters we moved from small city to rural. We almost went insane trying to get decent internet and then came Starlink!!!! Hands down, 100%, the best internet we have ever had!! Also, did not need to attach the dish to the roof. We made a ground post and put it on the top. It was about 5 feet off of the ground...perfect!!! Love your channel... So far in Alaska I've heard both good and bad with starlink. It seems to be pretty much 50/50 chances of it working. I know a family outside of Fairbanks that love it but say that it does go out pretty frequently but that it stays on long enough to get most work done. I think like any new technology, they need time to iron out the wrinkles. Hopefully that'll happen soon for all of our off grid families.❤️🙏

Tina, I love the faces you make🥰😍😂when talking about the 'haters'. I love your cabin!!! It's just the right size and you can always add on if needed. My husband and I raised 3 rowdy boys in a two bedroom apartment!!! Yes, 3 boys in a smallish room and we had one bathroom to share. There were some rough times but we made it through. My hubby is a 76 yr. old Air Force Vietnam vet with PTSD and I'm 70. We still live in the same home and wouldn't change it for anything. And your pond and home are just big enough!!! We live in a very rural area of the Appalachian mountains & we tried TurtleNet (what I dubbed them after learning how awful it was!) since we dont even get a cell signal here, much less decent internet.. but finally got our Starlink about 6 mos ago & it has been amazing for us! So much better than other satellite options.. only issue I think you'll have is the negative temps you get as I read that Starlink only works -22° & below.. anything colder than that & you may experience issues.. but hopefully not!

Yeah Starlink still needs 5-6 more launches to get good coverage up there. I think they were a little ambitious in releasing it for AK when they did.

You are correct! I live in Nome and have similar issues. Some days it drops for 1-3 minutes every hour or two, some days is it only up a couple minutes every hour. When it is up and running, I usually see 100+mbps. They say it will improve as what satellites are up there spread out and even more with each successive launch.

I have a smart tv and now I can watch you on my big screen TV and it was so nice watching it too I feel like I’m right there with y’all. It was so good to see Parker playing in the snow it brought back memories me and my two brothers playing in the snow all the time.
