We love the Aussie bites we buy at Costco and thank you for sharing this recipe. Our Costco is about a half hour away by car and since I have most of the ingredients (and a food processor) at hand, it seems only natural to make them up at home. Look forward to trying this soon!

Would love a recipe with some dark chocolate incorporated. I personally started crumbling two Aussie bites in a bowl adding some dark chocolate flakes, a tiny amount of milk, and mixing it up. My favorite 300 calorie snack now. I bought mine at Sam's.

Dark chocolate sounds like a great addition to me. I think you could just fold in around 1/4 cup dark chocolate chips or chopped chocolate bar into the mixture before shaping and baking

If you want to cut down on the sweetness I would reduce the granulated sweetener first because the liquid sweetener (maple or honey) is also needed for the mixture to stick together.

Hmm, if you don't want to use sugar-free sweetener or syrup, I wonder if you could use pumpkin puree or apple sauce, or even 1 egg to make everything stick together instead

I substitute monk fruit or stevia as my sweetener. It's one to one in ratio and it turns out perfect with no sugar. 👍

Light olive oil may be fine. Virgin olive oil usually has a strong flavor and is not recommended for baking

I don't have experience with a Ninja blender, but I think this recipe could work with a high speed blender. But you may have to stop it a few times to scrape down the sides with a spatula to make sure everything blends pretty evenly

I think so. You could use oat flour or blend the 1 cup of oats into flour in a blender. The raisins and apricots could be finely chopped with a knife by hand, and then the rest could be stirred together with a spatula in a bowl. The seeds will remain whole but I don't think that matters much for the success of the recipe.

If you don't have a food processor, a high speed blender might work. Or use 1 cup oat flour + 3/4 cup quick oats. Chop the apricots and raisins as fine as you can by hand. And then just combine everything in a bowl
