My mother makes this with similar spices with some changes. 1. For dairy free version, blend some cashews and water and add the same amount 2. Take some coriander seeds (1 1/2 tsp) and toast in butter till fragrant. Toss that in with your rice for an extra kick 3. Use green chillies (3) for that extra kick in the tikka masala.

I just made this today and it was absolutely amazing. My mom is battling terminal cancer and she has a tough time with food generally. Nothing tastes right, and restaurant food is out of the question for health/safety reasons. She loves Indian food so I wanted to make her some. She loved this so much, as did the rest of us. I'm notorious for making really terrible food but when I came across this recipe I thought it was worth a shot given how simple you make everything for us. Most days are just rough, and it brightened our day. I also used your Naan recipe, and tweaked one of them to add in some kashkaval cheese on request, and they were also a hit (I've never baked or kneeded or anything so you can imagine how surprised we all were). I just wanted to let you know this literally made a difference in someone's (rough) life. Ps I tried the macarons and wouldnt you know it, I screwed up the macronage and the sizing so they look horrabad but still taste so good!

Okay first things first, being an Indian i had to weigh in on this. My first reaction to your attempt on making the dish is that it was epic and relatively close to the authentic one.The trick to Indian food is to not complicate things. Keep things simple. Use fresh tomatoes instead of cans, chicken on the bone and not boneless, use whole spices instead of store bought powdered ones. Personal tip: Add garam masala always at the end accompanied by dried Fenugreek leaves for orgasmic flavors. Note: Fenugreek leaves bends the dish towards Butter chicken and butter chicken harms nobody.

As an Indian who lived in the US for a while, I had a couple of small tips to add - Red onions work better (more flavour!), and the basmati is best cooked on an open pan! In India, it’s what we do. 3 and 1/2 cups (or 4 cups) water for every cup of basmati, and top off with some vegetable/canola oil, and simply open cook! It’s perfectly done in 10-12 minutes, saves you the trouble of an instant pot !

Just do 1:1 rice:water ratio, boil it for 2 minutes, remove from heat and put a lid on. Wait for a few minutes until the water is gone and the rice is perfectly cooked. The oil is useless.

They have never had any kind of cooking that I do and I had this recipe printed out in a binder and I pulled it out for them. The best tikka masala you're going to be getting from anyone is going to come from this guy. This looks great! I'd just reduce the amount of tomato puree WAY DOWN and increase the amount of spices though. Western versions of tikka masala tend to have too much of tomato in them. Makes it too acidic. Increasing the spices will lend more complex flavors to the dish. Also, it's called chicken tikka masala because the chicken pieces are skewered and then roasted or grilled separately before being added to the sauce. That is essential. Thirdly, no authentic chicken tikka masala has canola oil in it. Mustard oil is an essential ingredient in this.

you really need to be cooking onions for a lot longer than that for good curries (and probs use two or even 3 onions). I worked at a good Indian restaurant for a while and the base of all our curries was a load of ginger garlic paste cooked off until starting to go golden, then 20-40kg of onion cooked for 2 hours or so, until theyre real brown. For home quantities I recommend cooking on low heat with lid on until starting to turn jammy, then heat up and lid off, constant stirring

I was thinking this. Every real-ass, broken grammar Indian recipe I've ever read starts off with "saute those fucking onions and ginger and garlic paste." Actually very true. Almost every gravy has the basic same steps. Onions should be reduced to around half their original quantity. And also using fresh tomatoes is recommended. That adds more flavour to the gravy.

Tikka means you gotta bbq the chicken till it's cooked and has charred spots, without bbqing the chicken it's chicken butter masala. basmati and jasmin rice needs rinsing, however longgrain, sticky rice and sushi rice do not need rinsing. you wash away most of the flavor there.

I just made this today and it was delicious! (It also tasted just like how my local Indian restaurant does it, only spicier). I did add some vegetables to it though, to make it a bit healthier (some thinly sliced butternut squash, a chopped red bell pepper, and half a small bag of "riced" cauliflower - I added them in with the onions). ❤ [I also don't have a working blender, so it did come out a bit chunkier, but it was still good!]

Mr. Hamster Before reverting to these “absolutes” like “always wash your rice!” you need to understand that there absolutely ARE times that you don’t want to wash the rice, and you want to keep that starch on there. Risotto is a good example. Also for Spanish style rice, I often will not wash it because I like a more “sticky” final product, where others might not. There really are no absolutes in cooking.

@Mr. Hamster 2 reasons. 1, cleanliness. Rice sits for ages in a warehouse and cleaning it gets rid of any dust or whatever. Cleaner taste for your rice afterwards. 2) Gets rid of the extra starch, which makes your rice cook through better as individual grains rather than sticking together as a clumpy, mushy sad mess.

Really good recipe. Very delicious. Made a few tweaks. Instead of cutting and frying the marinated chicken, I kept the thighs whole and broiled them until 160F (about 5 mins / side). No fond but less mess and still tasted great. Let chicken rest and then cut into bite sized pieces. Also, added 1tsp of dried fenugreek to the sauce when added chicken. Considering this as my “go-to” recipe.

Love this video! for future reference, you can blitz the onion with the tomato and it will form a thick base and also let you cook the water off more easily since you don't have to apply heat to break the cell walls, reducing your cook time by a bit. :)

Great recipe, made it yesterday and served to guests! Adapted ingredients only slightly to available ingredients and local taste (Norway): - used ghee instead of butter and oil (apart from in the curry), as some mentioned this in the comments and I had just bought my first pack - used ordinary red chili peppers from the supermarket, to control spiciness - wasn't able to filter the tomato sauce through a sieve, though it ended up being smooth enough without - used Hungarian sweet paprika instead of 'paprika' and Hungarian spicy paprika instead of 'kashmiri chili'.

I can always tell when one of Josh’s videos is a couple of years old because he used to narrate with a much higher tone of voice. Now, he seems much more confident being himself in front of the camera. More dry humor, lower tone of voice pointing to being comfortable in front of the camera, and confidence(less want for people pleasing) as well as a pinch of arrogance - in a good way 😂. (If confused, look up “can arrogance be good”) I appreciate Josh and his growth a lot through his channel progression.

I made chicken tikka masala yesterday, and it came out awesome! I'll admit, at first, the fragrance was there, but it was still lacking flavor...until I addded some cayanne pepper and some brown sugar. Brown sugar was the thing that lifted the taste for me. It was gooood!! There's a lot that go into this dish, but I'll be making it again, now that I know brown sugar was my saving grace!

Nupur Mate exactly what I was thinking... smh 🤦♂️. No bay leaf, cardamom or cinnamon sticks. You can actually see the chicken not entirely coated. Seasoning looked like it was adapted for white people (not authentic), which is strange because it is a Scottish dish.

I made this recipe last night and it was so delicious. I didn't have Kashmiri chili so I used regular chili powder. Also, I like a little sweetness in my Tikka, so I added about a tablespoon of honey to the onion mixture and a little bit more right before the end of the sauté.
