My family enjoy this type of Chinese Egg Noodles. They are thin, chewy, and springy without any addictive added. Only wheat flour, sea salt, duck eggs, and a bit of water. There's no kneading involved and all you need is a rolling pin to beat the dough until it's smooth and elastic. It's amazingly easy and what a difference it makes in taste. These egg noodles are great for making wonton noodles, simple ginger and scallions noodles, or top with of your favorite sauce.

Truly working physically reduce depression, take the frustration out one will have the satisfaction of something having done. This actually replace the need of gym, once in a while. Thus tones up the Arms too. Good for taste n health. Angry young people can do this instead of looking for bad indulgences

I've tried using half of the recipe and it was successful. So nice & delicious, i didn't beat the dough but i knead the dough with my hands. It turns out good & yummy, this recipe is a keeper, thank you...

This is a late question and i know this comment is really old but can i ask how you knead the dough?

@@vineticular1586 ...with your hands. jokes aside just knead the dough for about 5-10minutes with your hands, no fancy machines needed and it will change texture. might take less than 5-10min though, depends. and if you wanna know *how* to knead it...well...different people, different methods. i usually make "kitty kneading moves", if you know what i mean, and rotate the dough after every knead.

this is brilliant, all the noodle recipes ive seen have been the method where you pull the noodles, but folding and cuting is so much easier

this is amazing. thank you. i have been quite successful with making shrimp wontons (with store bought wonton skins and egg noodles). Now I can make my shrimp wonton noodle soup more home made with these noodles. :)

Our cleaver as you think of it in an Caucasian way is not correct as we Chinese use it all the time. Unless I require a thin blade. I use my cleaver for everything.

You are amazing. No kneading or pulling of flour. Wheat flour is great for people who had weak stomach. You only whip it and constantly rub the flour to prevent tearing I guess and easier to roll it. No machine needed like my Mexican friends taught me. Indeed brilliant.

I dont know why people do think that it takes a lot of time and I don't know stop being lazy !! If you wanna cook well it needs efforts too but it wonderful to spend 3 hours or more cooking and to see the final result in a bowl and you taste it with a relief after working hard on it trying to make it as good as u can , well if u think it rough then don't cook plz just go to the nearest restaurant or buy ready things to eat why to border ur self .

its basically similar to how to make a pasta dough. Only difference is whether you put that amount of water or not(I guess even Pasta needs some water though). Great video! Lots of fun watching this.

Yes, the only diff is the recipe. I prefer less egg in my pasta, usually I use max 2 then mix with water, or just water with tipo 00 + durum wheat...I guess, it's time for pasta. Ha Ha! Anyway, thanks for the comment.

I just tried this recipe and it's a WINNER! I follow the recipe as mentioned, added onion powder and white pepper. Knead the dough for about 5 mins or until smooth then rest in a fridge. I rolled the dough with pasta machine and Wow !!! The noodle texture is very good as italian say al dente. Be careful with the cooking process, take noodle off boiling water not more than 2 mins. My grandma used to make noodles without a knife. She strung the dough out and bounced it, and then doubled it over repeatedly until she had a hand full of noodles. She would then clip the ends off with scissors and lay the noodles out on a clean linen sheet to dry for later. Like magic.

i was experimenting with making noodles and found out that you can just mix the dough (a dry dough is best), then immediately roll and cut it. no need for kneading and resting. i can make noodles in 5 minutes like that. it will seem a bit less smooth but in the end it's still good noodles and it saves so much time.

The beating and resting (esp. for a dry dough) is crucial. The purpose of beating is to well mix the ingredient. The purpose of resting is to let a more equal water content dispersion among the flour particles especially the dry dough. During resting time water from the wet particles will flow towards adjacent drier particles. You will find the dough is softer after the resting time, because water content within the dough is more equally dispersed .

I didn't have eggs so I subbed buttermilk and added some sugar along with salt, no tart flavor and it was nice and chewy! still I'd love to try the recipe with eggs

Thank you for sharing. It will be 竹升面 by the way you beat the dough. Very interesting as we can make it at home. But I will not cut into small pieces then cut them into noodle, cut straight from the rolled and fold dough, so will not have so much wastage -- not even size noodle. Yes, the noodles has a chewy texture and taste great too. In the video I have to cut it smaller because I'm not using "wide lenses" camera, can't capture all. Yes, go ahead and cut it straight away after rolling. So, how did it turn out? Hope you can share the picture. Thanks.

ro ben You can use a machine for kneading the dough, but I'm not sure the texture will be the same. Fresh noodles cook rather quickly and it depends on the thickness too. I guess 2 to 3 minutes should be okay.

OMG, by the time you've done all the beating and resting, I'd have opened my ready made noodles, cooked them and stir fried them and eaten them, then gone to the gym, worked out, then gone swimming and then had a holiday in Las Vegas, climbed Mount Everest, and celebrated my 100th birthday!

how do you go about cooking the noodles? do you boil them first then fry? Or do you just fry them?

Jaylene79 I used this noodle for my Dry Wonton Noodles; kzbin.info/www/bejne/pYqtnJafjth6rJY . If you want to use it for stir-fry, then boil the noodles, drain well and add a bit of cooking oil & toss it well. Or to serve it in a soup, just boil the noodles, drain & add to the soup.

Can excess dough be frozen for later use? I am only cooking for one and that is a LOT of noodles for just me. LOL Great video! Thanks so much for sharing it.

+pjb31apb Sorry for the late reply. I'm sure you can freeze the dough. I would suggest, flatten the dough and store in a ziplock or plastic wrap. Thaw, and use it at room temp. Hope this help.
