Japanese chicken tempura (toriten) uses breast for the very reason you described: it doesn't release as much moisture as thigh, so the light fluffy batter won't get soggy! Chicken karaage uses thigh because the batter is so thick and can absorb it without going soft.

this is exactly how i make my chicken tenders. i marinate them overnight in the yogurt then oven fry them. my niece loves them.

I use the panko as well, but, i add a couple of tablespoons of all purpose flour and mix it in before breading.

Ohh I thought I was only one who felt only this way , I am not sure what happened to her in this show. We used to get more videos from her initally but then frequency of her videos dropped and also she was not like same in videos she appeared . I don't know what happened. It seems some inner politics .Because in some videos she seemed very sad .

I miss seeing Martha in extended how-to/cooking episodes--- like those from the past. I think she is as high-quality and interesting to watch as Julia Child----- comforting, actually. I have mentioned my Martha-fondness and the resulting disappointment (due to the lack of her appearances) before, but no one is listening. Even so, having Sarah on Everyday Food has been (for many years, and still is) awesome. She is great in this series, and one of the best out there. There is something really down-to-earth and cool about her delivery and her personality. Keep on cookin'. . .

These came out perfect. I make my own panko using a day old sliced baguette left to dry for a day and pulsing in my blender. If the bread is not quite crispy dry, the panko has the flaky larger crumbs characteristic of panko. Too often I have opened a store bought panko only to find it stale.

I make something similar to this using chicken breast strips. After frying them crisp I then slice them and lay the hot chicken pieces over a nice cold salad of greens, tomatoes and cucumbers. I love honey mustard dressing on it but almost any dressing tastes great. :)

Dont have any ventilation either, and also in a very small appartment, - besides cleaning the Grease very often, then get a dyson aircleaner with Carbon filtrering, - that really helps. - place it near the kitchen it can make a world of difference.

Sarah......buy an decent size air purifier (not one of those desktop ones!). I used to have Fillipino neighbors who fried more than anyone I knew and they ran one during and after cooking. It did a pretty good job of cleansing the air of that unique frying odor.

Made it today but instead of greek yogurt I used sour creme cause that's what I had at home, it was amazing!! Also I added some red paprika powder and garlic powder to the sour creme. As someone who let's breaded chicken this and hates how much times it takes to bread them all, this was a total game changer!! Definitely gonna make it again

I agree on the chicken breasts. If I could only eat thigh or breast for the rest of my life, thighs, absolutely. But dark meat really doesn't shine unless it gets a decent amount of cooking time, at least 30 minutes but especially after 45 minutes or more. And it's super forgiving when it comes to being overcooked. But for a short cook, like chicken Parmesan, nuggets, or butter chicken, I'm reaching for the white meat... and being very careful not to overcook it. Having said that, McDonald's chicken nuggets were better back when they used dark meat. But that meat was processed, so it was nice and tender. You can't do that with whole pieces of thigh or drumstick meat that have only been cooking for a few minutes. It comes out... sinewy. And sometimes you can feel the different muscle groups slipping and shearing apart when you chew. *shudder*

I don't like panko to bread my meats, I find it so hard and dry, I prefer bread crumbs, ground soda crackers, or plain flour, because the sensation in the mouth is not so harsh and keeps moisture inside the meat

i wouldn't freeze the leftover, but you can undercook it and then freeze it for later use. So when you recook it, you don't overcook it.

Greek yoghurt is a lot thicker than plain yoghurt. She mentioned that she uses a thick yoghurt so the bread crumbs will stick. You can probably use plain yoghurt and strain it so that it is less liquid if you can't get a hold of Greek yoghurt!
