For Americans (I had to look all this stuff up for myself, here's what I found) Bicarbonate of Soda = Baking Soda Caster Sugar = Regular Sugar Ground in a Food Processor for a few minutes Golden Syrup = No equivalent, but Corn Syrup can be substituted

Thank you - really helpful video as i had made this 3 times previously and failed - with your instructions it was a winner i used 200g castor sugar 60ml water 5 tbsp syrup - the temp is the key!!!

Hi Katie , in the 1980s they used to sell strawberry honeycomb milk choc covered candy bars and they were so nice . like a hardened mouse like honey comb texture in them . but pink strawberry i have no idea if it was sort of Meringue . but trying to find these candy bars now is impossible x I need to make those as well as these . thankyou for sharing .

Great video. I watched it a couple of times but you never mention the bicarbonate of soda which is what makes the sugar mixture go foamy. I'm heading off to make some honeycomb now 😁

Hey ☺️ thank you so much! That really does mean a lot. Oh sorry, i didn't actually say the temp as it usually says hard crack on a sugar thermometer but just incase yours doesn't it needs to reach 300ºF which is also about 149ºC Enjoy making ☺️

InTheKitchenWithKate Hi Kate, I hope you can help me! I tried to make the honeycomb today, and it looked exactly like yours in the video, however, I could smell burning sugar but it hadn’t reached the hard crack stage on my thermometer and when I added the bicarbonate of soda it was still very dark, so I think I may have burnt the sugar, do you have any tips of what I can do next time to avoid this? Thank you very much! 😄

@@tonoavail9757 ........you can burn the sugar if you dont mix all the ingredients together properly....usually happens if you have small pockets of sugar that havent dissolved fully with the wet ingredients - when combined properly you shouldnt have to stir it anymore untill youre adding bicarb............also a flat bottom heavy pan is best - medium heat even temperature is best......raise it to hard crack gradually - if heats too hot it will cause sugar to darken too fast and make the finished puff taste bitter.........you can add some vanilla extract/flavouring at same time as bicarb but mix it all well and pour quickly........always be very very careful using boiled sugar as it can burn your skin severely...........keep kids out the kitchen too.

We always called them angel wings... Don't know why. We make this at Christmas.( North Dakota cook) World Market sells golden syrup or find it on line. I love it on ice cream

That honeycomb treat with chocolate on top of it and I used to eat it when I was a child but as an adult I have had type 2 diabetes since 2012 and I can no longer eat this treat.Unless it can be made for diabetics then I can make this treat and eat it

If you dont have a thermometer take a class of very cold water ,then take some of the honeycombe out of the pot ,about a tablespoon .Drop it in the water ,if it brakes in the water then it,s ready to put in the pan .

Hey! So lots of people say you don't have golden syrup in the US but i've also heard a few people that say you do but you can either find it in the baking isle or the international isles?! Apparently you have a brand in the US that has been around since 1928?! I'll attach a forum to this comment where people have discussed making honeycomb in the US so you can read. Apparently corn syrup doesn't work for honeycomb but its the substitute in different recipe so i can't guarantee it will work sorry! Hopefully you can find some golden syrup! InTheKitchenWithKate While living in Japan (no readily-available golden syrup), I always made honeycomb with honey. It set up just fine. In America, King's Golden Syrup is available either with the table syrups or on the baking aisle with the corn syrup. It's an invert syrup (golden syrup) made with corn syrup as one ingredient. Available in dark and light versions.

I tried the recipe but it wasnt hard when it cooled down . It's still bending . What might be wrong . But it was sweet no bitterness

Flower Moon .......you must use a sugar thermometer and get it boiling to the correct temprature otherwise you have soft sponge candy.

Better if cut into rectangles first then you could cover more of the chocolate and bain marie the chocolate, microwave chocolate is just wrong and good quality chocolate

Try using a whisk to mix it in. It should help break it up more. Maybe give the Baking soda a whisk first as well incase it’s clumped up a bit. Hope this helps

@@ThisWithThem thanks for the reply, I'm using a nylon whisk and after another try I've even thoroughly stirred and to no luck I still find spots of it inside, maybe the metal whisk will make the difference?
