Hi @Miriam TTV, I just added about a third of a cup of water to the one cup of caster sugar, and three tablespoons of golden syrup. Once the sugar has dissolved and starts bubbling, it's just a matter of time waiting for the mixture to get to the right temperature. Just don't burn yourself!!

Good video mate, new sub here, I wonder if putting the mix into something like a large ice block tray or similar would work to keep them more uniform sizes?, only because I've got 3 young kids and they always fight about who got the biggest pieces lol , but they look great, cheers for the video🍻🍻

It's just a syrup made with 1 cup caster sugar, 3 tbsp golden syrup, and a little water.

I think your bicarbonate soda was a bit old. it didn't do the job. It should rise the caramel at least 4 to 5 times its volume and leave thousands of bubles (holes) in the honeycomb. yours is too compact.

Maybe it could have been even lighter.I really enjoyed it though, and wasn't chewy at all. Appreciate your thoughts on it, you sound like an experienced cook.
