Very important to remove the gills from the fish heads otherwise the stock will be bitter .Also rinse the fish is in cold running water for a few minutes to remove all traces of blood ,then drain before adding to the pot .

I just made it, used a salmon head and Sea Bass spine. My personal tweaks include : Old Bay added with thyme, Celery stalk & leaves with parsley stems. Thank you, fish chowder with Haddock is next.

Use little olive oil or veg oil instead of butter. Add garlic or ginger. Fry the fish a while or to little brown. Add celery on top of onion. Then you may have a surprise.

Just a tip as a culinary student, next time remove the eyes before adding the heads in the stock. These eyes can cause a "funky" taste at times. But overall a great video!

Sure, why not. I've used fresh water trout before and that made a nice stock. Also any crustaceans bits but fry them in oil first.

Depends on the fish, some flat fish 20 minutes is maximum as bitterness leaks out of bones. Other fish are fine for longer.

Remove the gills first, and make sure you don't use an oily fish as it taints the flavor of the stock. I'd also suggest simmering the fish heads and onions together for 10 mins instead of 5, but the difference will be minimal.

You have to clean and rinse the bones from all blood first. If not the stock get brown.
