Extract recipes
I used 80 proof vodka, but you can use any pure alcohol in your extract. We used 6-8 oz bottles for this recipe. If you use smaller bottles just adjust as needed.
*if you want to alcohol free extract you can totally adjust this to work for you. You need food grade vegetable glycine like this a.co/d/4yjBhz0. You will need to do 3 parts of this with 1 part water to achieve the same results.
Vanilla
6 beans slit down one side
fill bottle with alcohol of choice
Cinnamon
4-5 cinnamon sticks
fill bottle with alcohol of choice.
Peppermint
1/2 cup fresh or dried mint leaves
fill bottle with alcohol of choice
Almond
1/2 cup raw sliced almonds
fill bottle with alcohol of choice
Coconut
1/2 cup unsweetened coconut shredded. We love the one from Azure standard www.azurestand...
fill bottle with alcohol of choice
Orange or lemon
zest or peel of 1 large or 2 small lemons or oranges
fill bottle with alcohol of choice
You can also use apple peel, pear peel, lime, clementine, fresh or dried cherries or cranberries, coffee beans, anything you can think of. Most of the time it is the peel of 2 fruit or 1/2 cup of anything already dried.

I have recipes from 1800’s that a great, great, great grandmother made flavorings for income. The paper is very brown & crumbling. You’ve convinced me I need to get the recipes out and preserve them by re-writing them down or copying the pages.

One of the extracts i make is clove. Just 2 ounces of whole dried cloves jn a 4oz mason jar with vodka. Its a great flavkring, but also works to slosh a small amount around in your mouth for minor irritations and discomfort while you wait for the dentist!

Would you tell us some of the recipes you use these extracts in? Specifically the cinnamon, mint and citrus extracts?

@janetbirky1626 - I will be honest, the clove is the least used. I put a few drops in tea and I use it in molasses cookies which are a favorite around here. Mint and citrus are interchangeable with lemon and peppermint extract.

If you have blueberry bushes slice up the lemons and oranges and place them underneath the soil your berries love the high acid soil and it’s all organic zero chemicals 👍🏼

Something I started several years ago, was to make 2 quarts of vanilla. I let it set for almost a year, and then started using vanilla, and pouring some into smaller bottles, as gifts, from 1 of the quart jars. Once that got down to about 1/3 to 1/2 gone, I refilled it with alcohol, and placed it behind the second quart jar, and started using vanilla from jar #2, rotating them as soon as they got down to my selected amount! I've had the vanilla going for 4-5 years, and just added more vanilla beans, leaving the original beans in the jars, one time. I've never had to start vanilla from scratch, or wait the 8-12 months, for a new batch to develop the desired flavor! I highly recommend this technique! There's a way to make vanilla by putting closed pint jars of alcohol and vanilla beans into an instant pot or electric canner, and somehow running it for a certain time, and the vanilla is instantly infused into the alcohol. It must be done in closed pint jars, to avoid evaporation. I've never done it, so I recommend looking up a video on how it's done. I can't remember if it was in an insta pot or an electric canner, so please, look it up. I was surprised how fast it worked, when you need it for last minute gift ideas!

I've made it in the instant pot and it worked well. When you add more alcohol to your 1st quart jar and tuck it behind the 2nd jar, do you add more fresh beans or just reuse the old ones only?

I saw a video doing the instant pot version. The guy said it was good but the flavor of the aged vanilla extract was much richer. 😊

I never thought about making quarts of it! I don't bake as much as I used to, but I really enjoy using spiced rum to soak the vanilla beans in. Adds a touch of extra flavor.

Another option for cheap jars is to not only check out what they have in the glassware at dollar tree but look at drinks everywhere you go; many come in super cute bottles that can be repurposed. I only get the few that I drink, which you can do as well, but if something is on sale for cheap and the containers are glass and attractive, consider using them. Goo gone willremove just about any label and acetone will remove any printed on label.

I love this idea. A suggestion for tags is shrinky dink plastic. I made some plant tags with it and they are still going strong, 3 years later.

Oh I make vanilla and after it's been shaken and stored for 6 months I pour it in a pot and simmer it for 3 to 5 minutes to cook out some of the alcohol. It's absolutely amazing . I have a quart about ready . I'll cook it down about 3/4 to a cup less .

A newbie here! What a great ideal! Last year, I made vanilla extract. I need to try the others. I gifted my daughter jar last year and she loved it. She has hinted around for more. She said what a difference in the homemade and store bought.

I keep homemade vanilla extract made up in my pantry but I never thought about making the other flavors. Great idea. I give the vanilla out for Christmas gifts plus I use a lot of it myself for baking. Before my Rosemary plant died I used to dehydrate it and grind it to give as gifts too. My nephew always asks if have more Rosemary he can have. Guess I will need to plant some more. Thanks for the great extract ideas

Thank you so much for the great ideas! I've made vanilla extracts in the past for gifting but vanilla beans are quite pricey and it's very basic. I can't wait to make the lemon and orange ones because they will look gorgeous as a gift, especially with a homemade tea blend or simmer pot bag. This was super inspiring!

I have 2 vanilla extracts steeping in my pantry - one with bourbon and one with vodka. I also have coconut, orange, lemon, cinnamon, coffee, and cocoa nibs in separate jars with vodka. I also want to make mint and anise extracts before the end of August.

You've inspired me. I'm going to make hazelnut with bourban and shredded frozen butter with rum (then put in fridge for a few weeks then drain. I'll save that butter for baking too. I'll try the almond too but I heard almond extract is actually made with apricot pits (the inside nut like part)

I trimmed the dead parts off…placed the plant indoors( mixed used coffee grounds & crushed egg shells& watered every other day)when weather was warm took it to a partial shade area.. it grew back better than ever 💝

I was told that you need to keep the vanilla or whatever you are infusing with, covered with the alcohol, or it will mold or rot. I love the homemade vanilla, I will have to try the almond and cinnamon!❤❤❤

I've never seen your videos before. I've been missing out. I love your casual manner. A little piece of Christmas style cloth over the lids and then tied with the tags would look really nice. I'm from the UK and will often do this with preserves that we gift. Now off to find more of your videos :-)

Tennessee girl here roasting and dying in 80% humidity. The Nescafé Gold is what I use for coffee extract or homemade Kahlua. My husband, who is a German National, turned me onto the brand for cooking and the like.

I use either Everclear or "rott gut" vodka that I run thru a Britta filter a couple of times. You'd be surprised the difference it makes when you filter the vodka first.

I was going to say this too! Britta filter a couple times, and even harsh vodka smooths out. And medium/high grade vodka gets even better. Perfect for extracts and very easy to do.

This is first video I’ve seen and love it! I bought vanilla beans last year and froze them (Hope still ok to use) and little glass jars. Will be making these for Christmas gifts snd trying all the flavors you made. Think of how much they charge is at the store for pure vanilla extract when it’s this easy to make amazing. Great video

There is a trick to making instant coffee and expresso. Mix it into cold milk with sugar and all with an immersion blender. Once blended add hot water. Perfect. If you like Nescafe try Cafe Bustelo. OMG delish. Nescafé is the only instant coffee I make and the expresso is Cafe Bustelo.

Love this! I just 'discovered' your channel. I had just made vanilla extracts with Jameson Orange Whiskey, another with rum, and brandy. My herb group thought I had invented brain surgery! LOL I am passing on your channel to them so they can watch. Now going to watch your other videos.

Thank you for all these wonderful ideas. And you can pop that little plastic pourer on top of handle bottle to pour much quicker. I don't have the patience to pour with them on...😂😂😂

If you drink the Starbucks coffees that comes in the glass jars, those are good for stuff like that. I save mine the bottles are free.

I always zest my citrus when making extracts. That way you only get the skin part and none of the pith. It also releases more of the oils in the skin which is where all the flavor is located.

We love Pearl! She is old and can be a poop sometimes and burn things. We were very lucky and got her for super cheap on Facebook marketplace. She weighs a ton but she’s a little self conscious so we don’t talk about it in front of her 😂

Extracts are also called tinctures for us herbalists. Cranberry would be good for UTIs. Mint for tummy. And they are yummy. I make a clove one to use in my oil pulling for my teeth.

Something for Christmas. You can do fresh pitted black cherries in bourbon. It makes delicious adult cherries and an incredible cherry extract.

@joannbradley8465 I kinda wing it. Just pit and stuff a ball jar with cherries. Pour your favorite bourbon over the cherries. Put in refrigerator wait for as early as 2 weeks or let them sit linger for a stronger taste. They will keep in the refrigerator unopened for a year. Let them sit. Because cherry season in in June and July, I make them now for Christmas.

Years ago, during lockdowns, I found similar little milk bottles at Big Lots. I ordered them online & they were delivered to my front door. I was wondering what I would do with them, now I know. I will frequently buy something if the price is good even if I don't have a use for them yet... I'm thinking about using spiced rum to make some of the extracts.

Cut the citrus up and cook in a simple syrup until candied. Dust with sugar. Use as a garnish on pound cake.

I started making my own vanilla extract 3 years ago. The recipe that was given to me told me that the extract had to sit for a year before I could use it. So every year I will make a crap load of vanilla extract just to have enough for the year. Thank you so much for your recipe as this is a game-changer for me. I do have a question, I would like to make hazelnut extract should I slice the hazelnuts or just put the hazelnut in whole?

I would chop the hazelnuts up first. Have you seen that some people use an instant pot to make extract so it’s ready right away? I haven’t tried it yet.
