Congrats on your 500! These cupcakes IARE THE BEST because you know exactly what is in them! It is a lot of steps, but if you are concerned about what you put into your body, this one has what it needs and not what it doesn't need. No preservatives or added crap! You are my favorite baking gal, Steph! Back years ago, Hostess ran a special batch of chocolate filled cupcakes. I suppose you could do that with these. My grandmother used to melt Hersey chocolate bars and ice her cakes with them! Talk about Rich and decadent! Thanxz

Definitely going to to try this!!! Mmmmm. 😋But I think I would put the filling in from the top since it would be covered by frosting anyway. That way the filling wouldn't squeeze out from the bottom onto your clothes. Just a thought.

I can’t wait to try that filling! I have made Whoopie Pies in the past and after 3 or 4 various recipes I was always disappointed with texture. Powdered sugar has that certain mouth feel (I’m sure you know what I mean) but this recipe with corn syrup and shortening sounds like a winner. And since you endorse I am confident. Thanks!!

I Stephanie, I have made many of your recipes and have not had one that didn't turn out beautifully until now. My cupcakes fell apart while taking them out of the pans and even while I tried to cut the holes. The cakes were flat and sunk in the middle after taking out of the oven. I did test with a toothpick and it came out clean.The flavor was terrific but there was no way I could pipe the filling into the cake. I am open to suggestions. I also made your Hot Cross buns and hubby said they were the best he had ever eaten. They were perfect. Thanks for all the great recipes and tutorials.

It's really hard to say exactly where the problem may be. But reasons for this can be under baking the cupcakes, over mixing of the batter or taking the cupcakes out of the pan too early. It can also be caused if the oven temperature was too low. You could buy a free standing oven thermometer to double check your oven's calibration.

@@joyofbaking @pmbanfor1 I made these today and had the exact same issue...cupcakes fell apart. I read your suggestions and of all of them if must have been overmixing the batter, however I feel strongly I followed the recipe instructions, even set a timer for the stand-mixer beating. It was delicious, I still dipped in ganache frosting and used the filling to decorate the tops with the white squiggles, but no possible way to fill them, and about half the "cake" was unusable because fell apart (not into making cake pops). Thanks.
