I looked at the hot cocoa at costco yesterday, thinking maybe I can give this to my toddlers for a reward helping me etc, then I looked at the ingredients and amount of sugar and said NOOO WAY. Just found this! :-) Excited to give them a treat! thanks so much.

Hot cocoa would be a sweet reward indeed. And you can tailor the mix to your preference. Use the kind of sugar you like and less of it if you want, whether that's plain white granulated sugar, coconut sugar, date sugar, or evaporated cane juice crystals for a small dose of nutrients along with the sweetness. could you use vanilla bean powder instead of liquid vanilla? it just seems that with such a small quantity of the liquid, it just seems impossible to be distributed it among all large quantity of dry ingredients

It does work in the microwave, my kids used to do that. Just watch it carefully, because milk can easily boil over. There is no milk in the mix, so it lasts indefinitely - years - on your pantry shelf!

It's a very small amount of vanilla and does not affect the shelf life. It will last a year or two - or longer - easily. Enjoy!

Could this be made with just boiling water? I am lactose resistant (I can have small amount of dairy in a day). Learned about you from Carolyn's channel.

Hi Sonja, I don't think it would taste right made with water. What about a nondairy milk? I especially like Carob Cocoa made with coconut milk. I usually use the type you buy in a carton in the refrigerated case at the grocery store, but have also made with with canned coconut milk (either regular or low-fat) and both are delicious. Of if you are into making your own homemade nut milks, like cashew or almond, one of those would be very nice I think. ~Michele
