I find to make less crystallized, let it defrost a little than blend it again and refreeze.

extremely late reply, the reason this happens is that when you blend it you break up the large ice crystals into smaller crystals. if you do this repeatedly (~30 minutes between breakings) with a blender or with a fork etc, you can get a smoother texture until you let it go for it's final longer freeze.

You added straight sugar instead of sugar dissolved in water. If you add sugar water instead of straight sugar it will be creamy.

For brands you can buy in a store, compare Luigi's Italian Ice which is creamier, to Lindy's Italian Ice which is icier. This is also true in modern Italy, where its composition can vary depending where you are

Maybe adding more sugar or adding a liqueur like limoncello would help since it lowers the freezing point. That way it won't solidify as much

I’ve been saving cups of Luigi’s Italian ice to make my own. If I was to follow this recipe up to the freeze for the initial 30 minutes, fluff it with a fork and then scoop the mixture into the cups and freeze those would I get the same results? EVERY recipe I find says to put the mixture back into the freezer for an hour or 2. Thing is, I want single serve cups when it’s fully “cured”

Make a big batch in a pan then before the last freeze, put them in the cups maybe 🤔 so you don’t have to blend individually

maybe put the strawberry and peaches into ice cube trays too freeze. Then put the the frozen ice cubes in a food processor, that might help with the texture to be more fluffy. Also easier to scoop as well,

I had my first Italian ice in my late 50s. I was in Florida in summer and randomly anded up at a Rita's Italian ice. I had a Strawberry and it was love at first taste. I was half way through vacation. I had one every day until I came home to California. There's not many Rita's in Southern CA. 3 total I believe, There's was one 4 miles frome home. I was a regular until I moved. It was 104 degrees today and Rita's is too far. I had to learn how to make my own, I love it so much. I'm not even Italian! I hope I live to 116 yrs old. I missed out on the first 58 yrs thinking Slurpies were good. How wrong I was. I see Italian Ice as gourmet ice.
