I toast the fennel, pepper, and rosemary in a cast iron pan for a minute until fragrant. The flavors are really enhanced when slightly heated and start to release those aromatics then add right into the meat and it makes a world of difference. Also, use Heavy cream as your liquid when mixing your sausage! Makes the best brats, summer sausage!

Always make my own blends. Even have a garbage blend, which is like when I make seasoning for something and have leftovers, I just mix it with the last leftovers, it gives me an ever evolving seasoning, and honestly it's really freaking good. So much has made it's way in there over the months and melded together you can't identify any single spice or herb, it's kinda of taken on its own unique taste, that's more than the sum of its parts. I find it fantastic on meat. But it's pretty good on roasted or grilled veg as well.

I tried this seasoning mix with ground beef and then added marinara sauce for an awesome spaghetti sauce. I’ve made it several times now. My son loves it. Btw, I just eyeball how much I add to 1 lb of ground meat. When it looks like a lot that’s when I stop. 😂

You know I haven't weighed or measured it. I just make it, use it & make more when needed! : ) I use 2 T per pound of ground pork which I failed to mention. Ugh! I haven't ventured into making my own sausage links although that is a place I want to go for sure!
