ingredients
1/4 Butter (unsalted)
1 Cup Milk (use any milk you like)
1 Cup Shredded Cheddar Cheese
1/4 Cup Sour Cream
3-4 Tablespoons Flour
One Bag Elbow Macaroni
Cheese for the top
Parsley or Chives for garnish
Preheat oven to 350 degrees
In small sauce pan melt butter on low to medium heat and after the butter is melted turn the heat down to very low heat and add one tablespoon at a time and mix until well combined and watch carefully after each add of flour to the butter and mix until it starts to thicken a bit and add milk and stir until well combined to butter and flour mixture and starts to thicken more and add the shredded cheddar cheese and mix more until cheese is melted and combined and turn off heat and add the sour cream and mix in the mixture and set aside and cover and while making the cheese sauce heat water and add some olive oil and a little salt and boil until is boiling and add the elbow macaroni for 5 to 6 minutes or until tender and remove from heat and drain the water and return the elbow macaroni to pot and add the cheese sauce to the elbow macaroni and mix well until well combined and put the mac and cheese in baking pan and spread it out and do your best to make it even and if not using right away let it cool cover with plastic wrap or aluminum foil and place in refrigerator. When ready to preheat the oven to 350 degrees and feel free to have more cheese on top and cook for 30 to 40 minutes and if you want garnish with parsley or chives and enjoy.
