I just made this and it turned out perfectly! I followed your instructions re stirring the flour,/milk/butter mixture constantly and it was velvet-like smooth. I also added more salt than I normally would and it was definitely needed. Milk/flour/butter certainly dilutes salt in flavour. Next time I’ll add a bit less pasta as like you, I love a saucy cheesy mac and cheese. This is the only recipe I’ve tried that turned out like all the images. I’m going to stir through some bacon and caramelised onion as I added blue cheese to my sauce and combined, those flavours work perfectly. Thanks very much for an easy to follow and well instructed video. For Australians cooks use, I used 25 gm plain flour and 45 gm unmelted butter.

You've done wonderfully Sandra! And yes, whenever you work with dairy you will need more salt than you might originally expect. That's why I'm so big on tasting and testing and adjusting as you go so you get it just the way you want it. First time viewer, and really glad I found you..,such a well presented program...each step easily explained, and you take the time to say why your doing something. Never thought of making it in my oven proof pan, but makes total sense and less washing up!... I sometimes put slices of tomato on top with the sprinkled cheese before baking ..just adds to decoration, and a little extra taste that’s all. Hey Vickie, I'd make those by taking good fresh bread (2 or 3 slices) and running them through the food processor. I'd add a couple of tablespoons of melted butter and a 1/2 teaspoon give or take of garlic powder and put all that on top of your mac and cheese and bake it up! If you'd like your bread crumbs a bit drier you can always put them in the oven for a few minutes to dry them out before adding them to your pasta. :)

Hey Meilin! The issue here is that this is the very, very first video I ever made more than 4 years ago when I was focusing on making southern comfort food--and teaching people to cook from scratch, which has always been my message. This channel focuses a lot on getting chemicals out of our food, but that looks different for a lot of people and while homemade mac and cheese is far from an anti inflammatory food, a homemade version like this is still much better for a family who has only had it from a box. That said, my anti inflammatory videos were a series I did for January and aren't part of what happens with every recipe on this site. It may change in the future, I'm not sure. Lynden that's a Cuisinart hot plate. It works pretty well but it gets really hot! You might like an induction top more.

when i do 3tbsp of butter and then add 3tbsp of flour it just turns into a big clump.... ive tried it with melting the butter first and with putting the flour in right after the butter...

Hey Brittany, it will clump some or at least be thick. That's normal. You should melt the butter first, then add the flour and stir that paste around for a minute before adding the milk. It will work out fine.

Just curious, in the recipe it says the temperature for the oven is 350, but in the video u said 400. If I’m putting mine in like a foil pan what temperature should I cook it at? BTW I made this recipe last year and it was delicious, so glad I found it again!

Rayleen, sometimes I have been known to wing things. ;) Go with 350, but 400 won't hurt anything--after all, you're going to keep an eye on it and pull it out when it's bubbling perfectly. Enjoy!

It will be really, really rich if you use cream, but it does work. You could do cream and thin it with a bit of water if you wanted to as well.

NOT HOLDING YOUR MOUTH RIGHT!!! Haha! You're only the second person I've heard say that. My husband being the first!!!. Must be a Southern thing. He comes from SW Virginia. Definitely going to try this mac and cheese.. Would you do something for we newlyweds and empty nesters? Give us hint on how to either half a recipe, or how to properly freeze leftovers. And what freezes well. I'm writing in 9/21...coming out of the pandemic. (Glad your on you road to recovery. You were missed!) A couple of thing I learned was how to be more frugal and saving leftovers. And that some things DO NOT freeze well! Nor half properly.Yuck. Should have halved some things. But some things don't halve easily either. Can you give us hints, please? Hopefully this mac and cheese will freeze well. Oh! I have my Mother's cast iron which she got from her Mother !!!.. Prayers for your continued recovery, and continuing battle with your chronic illness. Those prayers are a tiny bit self serving...I love your channel!❤

Anne you can just cut the recipe in half to make a smaller batch. And I don't think frozen mac and cheese is good AT ALL. The noodles get too soft. That said, if you want to try it, don't bake it--just mix it up and cool it down. Place a layer of plastic wrap right against the surface then wrap it tightly and freeze for up to two months. Thaw in the refrigerator or bake from frozen by covering with foil, bake 20 minutes, remove the foil and bake until bubbly. Glad to be back--so watch for new videos every week! --Rachel

I tried your easy bread recipe no good it wasn’t you ! I did 3 things wrong 1 I put the dough in the refrigerator over night I started to late,2 I put the wet ingredients in to the dry ingredients 3 I put it in the oven on a high rack and it never got brown. I had to put it under the broiler after 30 minutes it just would turn brown. I am always in the kitchen please tell me where I went wrong I’m 80 and this is frustrating many thanks. I thought the dough was nice and elastic Martin

Well it sounds like you have your own answers there Martin. You can't refrigerate the dough in this case. You may have had some mixing issues though I doubt wet into dry was the real deal breaker. Top rack baking can potentially slow the browning process but I have also seen loaves that were over worked and had too much flour form a very hard crust that you could lift off after baking and those loaves don't get brown. Bread is finicky and you can't change the steps without getting very different results. Try again and maybe the next loaf will be better.

Charlie you have one of two problems: first you either used a bagged cheese that has cellulose on it which causes clumping when you add it, or if you shredded your own cheese the problem is that you got your milk and flour mixture too hot. You have to stir the sauce constantly, and keep the heat on medium/medium low. If you head over the main recipe on the blog and read the comments you'll find my explanation of this issue there as well. Just try again, turn the heat down, keep stirring, and use good cheese.

I think the difference is how quickly it comes to a bubble. Mine heats really slowly over 6 to 8 minutes and only "boils" during the last minute or so and I stir the whole time.

Feast and Farm Cooks Yes that’s what I did too. I stirred it on a really low heat, let it bubble for about 30 seconds then stirred it again on really low heat for a few minutes. Your instructions are fail proof - if followed:) Cooking needs slow love, not haste.
