Hi Stephanie! I just started watching your videos and I enjoy them so much, I subscribed to your site!!! I have a few helpful tips I would like to share with you when making homemade marshmallows. Hope you find them useful!! First, when I am ready to pour the marshmallow into my pan, I lightly spray my silicone spatula and recessed spatula with non-stick spray. This will help release the marshmallow from the bowl and the spatula. Second, when I want to make colored and flavored marshmallows for an occasion like Valentine's Day, I use red food coloring and strawberry extract. Instead of using powdered sugar, I use the same food coloring and mix it with granulated sugar. Spray the inside of your pan with non-stick spray, and then dust with the colored sugar. Sprinkle colored sugar on top. Roll cut marshmallow squares in the same sugar after cutting them, or use cookie cutters to make shapes. It's like having homemade "Peeps". Delicious!!! Hope you get to try them.

Thank you for the clean up suggestions & for the conversions as I live in Canada and we use metric. My Grandma used a small amount of oil (unflavoured) to brush the knife with to cut. That helped with slicing and I didn't notice any added flavour. Thanks again!

My mother made these when I was a child. I have a very poor instructions for this recipe, so grateful I found your recipe. Turned out beautifully. As a girl my mother rolled the marshmellows in very finely chopped nuts and they were excellent this way. Also, I put a little bit of peppermint flavoring and red food coloring.

At the end I would pour a cup or two of Rice Krispies in the bowl to clean it! Hot water in a bowl or even boiling would be good to set the bowl in to keep the mixture workable until you are finished. I think a cup of boiling water to dip the knife in often would keep it workable also.

So good I'm on my 2nd batch this week...this time I tried the juice and zest of a lemon plus enough water to get 1/2 cup for the gelatin and 1/2 cup of water for the sugar...same amount of vanilla...can't wait for them to set...the bowl tasted like a Lemon Meringue Pie...might make a good white chocolate s'more...

It is a Casa induction burner. I bought it at Williams Sonoma when they had a sale a few years ago. I don't think they carry the same one anymore.

make your fudge while this is whipping, then when you pour the marshmellow into the pan add the fudge to the bowl and incorporate the unused marshmellow. Adds great taste to the fudge, doesn{t interfer with it{s setting process, and it is fun to experiment

Are you saying they were still sticky after letting them sit for 12 hours? Did you cover the surface of the marshmallow with a layer of powdered sugar?

Hi! I tried to cook marshmallow by your recipe, thanks a lot! I got a good stuff, but instead of corn syrup I used glucose syrup because here in Russia hard to find corn syrup, even if you find its kind of expensive, but I am wondering - is it possible to get my marshmallow a little harder. I got my marshmallow a little too tender, thanks for your answer.

The setting time will depend, but normally 8-12 hours. I like to use a saucepan with a heavy bottom so the sugar syrup doesn't burn. There isn't much you can do about the smell of gelatine.

No, you can use sheet gelatine. I use powdered gelatine just because it's easy to find where I live.

Quick tip: A large bowl scaper dipped in cold water (you might want to dip your fingertips as well) gets out all the marshmallow creme out in one to three goes! Easier clean up as well.

If you zip your baggy closed except for 1 to 2 inches at one end, then dangle it in a bowl of iced water, you will see that almost all the air is expelled, and you can then quickly finish closing it. Works best if the goodies inside the bag are at room temp or warmer.

You have to be fast when pouring the fluff into the pan. Before it gets too sticky. That's the key!!

I love this recipe. I tried it for the first time tonight, and it worked perfectly. Also, I used the water and it spread out perfectly. It could be that the marshmallow needed to be mixed longer. Or if the humidity is high, that will also cause them to be sticky.

home made are so much nicer and people are amazed. I've made them for years. I dust with 50/50 powdered sugar and corn starch, keeps it less sticky I use cookie cutters for holiday shapes, too
