This used to be a children's treat, until it was made with homemade marshmallows. Then it turned into a gourmet confection. You only need four ingredients to make this delicious No Bake confection; homemade marshmallows, peanut butter, butterscotch chips, and butter.

I just have to say that I make the best goodies when I go by your videos. I've tried so many recipes online and it just never turns out right. I didn't have family to teach me anything as a kid so I learn from you. Thank you so much Stephanie!

can't wait to try this version. great technique on clipping the paper to the pan like that. really holds it in place. peeling back the parchment when the squares are set is my fave part. it looks and sound so satisfying, lol. nicely done.

These look wonderful stephanie I've never made homemade marshmallows before but I will try that now. Can I use dark or white chocolate chips ? We don't have butterscotch chips here in Australia.

I've never tried it, but you could use either the dark or the white chocolate chips.

Wow thank you for this recipe. I want to try this out. Do you leave the marshmallows to set for 6-8 hours in the fridge or at room temp?

I let the marshmallow set at room temperature.

There're no Butterscotch Chips here, could I use butterscotch soft candies instead (that can be melted I'm sure) and what would you recommend as how many candies should I use? I'm so intimidated by Homemade Marshmallows but my grandma was an expert on them, I think I have to keep her tradition alive! Thanks Stephanie for another great recipe?

Which peanut butter do you use? The natural one which requires stirring of the oil on top or the processed one which may contain other ingredients other than peanuts and salt? I ask because in some recipes the natural one doesn't combine the intended way and can ruin the recipe.

I love these. Some people use rainbow marshmallows. I prefer to use the white.

Would it be ok to drop some cooked syrup into a glass of water to see if it is in the soft ball stage? For those of us with no thermometer? Or is the temp too critical? This works for fudge for me.

It's easier with a candy thermometer, but you can check the cooked syrup that way.

hi Stephanie! ♥ from Bangladesh. I tried to make marshmallow before with gelatine but my marshmallow did not set after 12-14 hours. instead they were a gooey mass and only hardened after I put that in refrigerator! It again became gooey in room temp. after few minutes.. I used hand mixer for beating and continued to beat for good 15 minutes. here summer temperature ranges from 30-37 degree Celcius... Can you gimme some suggestions???

I use a Kenwood Titanium Chef 5 quart mixer.

I have a question, I know it wouldn't be as good, but can you use the baby marshmallows in a bag for this recipe? I make so many dishes for Christmas and I love the sound of this, but for right now, would that be possible? I will try my hand at homemade at a later date. Our weather here in the mountains, it would be hit or miss whether I could even make them. Thanks for posting this recipe. You are a jewel.

You could use the commercially made miniature marshmallows. It will still taste really good.

You can use corn syrup, golden syrup, or liquid glucose.

I didn't know one could make their own marshmallows. Looks yummy, but - I can't do that. I do have a container of marshmallow crème. I may spread it out and let it set up and then slice it as you did. Also - it says four ingredients, but that's assuming the marshmallow is already made; and I don't have a stand mixer, or a candy thermometer.

Stephanie in India we neither have golden syrup nor corn syrup.. So is there any other substitute

You could use liquid glucose.

Joy of Baking m not sure but I think liquid glucose is also not available here.. Here heavy cream is also not available .. I want to try some cake recipes if urs but unfortunately can't make it coz heavy cream is not available here.. Creams which are available here have low fat content (less than 35%)
