This type of pasta takes other names in other regions: in Umbria they are called stringozzi, in Viterbo they are lombrichelli, and what do you call them?

280 g of 00 flour
120 g of re-milled semolina
Water 200 g
a spoonful of extra virgin olive oil
a pinch of salt
🌶For the seasoning (for 400 g of pasta)
extra virgin olive oil
1 clove of garlic
1 fresh chili pepper
a sprig of parsley
6 anchovy fillets in oil
stale bread 50 g
pecorino cheese 50 g
