I'm making a pot right now! I live on the East Coast and we are waiting on a snow storm and I cant think of a better meal than Pho to enjoy on a "shut in" day!! Don't know if you still doing this, but thank you so much for sharing. We had pho in Vietnam about 3 years ago and ever since try to get the perfect authentic recipe. Love the video and love your mom.

stir it around on a frying pan for a few minutes on medium heat until you can smell the aromatic scents from the spices. once you can smell the spices take all of it and put it into a mesh satchel or coffee filter tied up w/ some string. just toss in this spice satchel into the pot while the meat is simmering for hours.

i like roasting the onion before tossing it into the soup base gives it a heartier rich flavor. also heating the star anise in a small frying pan releases more of the aroma before tossing it into a satchel into the pot.

I was taught to cook pho couple years back and this is how it should be done. I use five or six different herbs instead of the ready made soup base. I am itching to cook pho again after watching this :-)

OMGGG! YESSSS. Remember when you tweeted that picture of your pho bowl a while back? I freaking saved that picture bc it legitimately looked like the PERFECT bowl of pho. Great info. I was low cooking the spice pouches far too long. I thought it had to be in the pot for hours. Still was tasty. I make a lot of this soup as it is very filling, and tasty. I also add thinly sliced raw Fillet of Beef to my hot bowl of soup just as I commence to eat, just like the cooks do in the restaurant. I am not sure about the early use of salt to help clean the meat. I also don't add any salt until all cooking is done, except for the vegetables. Salt draw out the moisture from meat. I add salt in with vegetables when cooking to help keep their colour. When all is done, then I add salt and Vietnam Fish Sauce to taste. I make a lot of the soup with bones that I can later use to heat up and then add simmered meat and veg along with the spice pouch which saves time when in a hurry. Great video. I don't know if it's just me but I usually scorch the onion and ginger before putting it in the broth. And I also use coriander seed and cinnamon stick in addition to flavour the broth. Looks delicious though, Cheers!

Thanks for sharing! I love PHO! One thing though, you guys shouldn't boil the rubber band on the green onions. Even though you didn't cook it for long, there are still a lot of toxins getting released. In general, I avoid plastic or rubber from heat.

Pho in a crock pot! What a great idea! Much safer than cooking it overnight like my parents used to do. LOL! I think charring your onion, ginger, etc., would add a greater depth of flavor. Would be great if you gave approximate amounts of what and how much spices were used if the packet was not available. Regardless, I got some great ideas of how to simplify pho from your video. Keep the cooking vids coming!! :)

Love love pho. I usually go to a Vietnamese restaurant for the authentic soup. I also make my own soup at home but its more of a Cambodian style. I prefer Vietnamese pho. So good!
