They make 1/8 Pipe nipples with pointed Orifice - smaller hole to drill and 1/8 Pipe Tap most of your Commercial Fish Cookers have them and you can also get the 1/4-20 threaded jets and make your own using 45 or 90 degree 1/8 fitting and thread to 1/4-20 thread inside.

This is really great! Do you have any ideas about how I might make a combo 3 pipe burner? I have big outdoor stone charcoal grill but I would like the option to sometimes use propane instead of the charcoal.

Actually we have been talking about making a 3 pipe. We will try to do a video on one of those before next spring.
