I used to make my own all the time. Then I lost the recipe and stopped. Will have to start it up again. It was always so much better and cheaper.

I do my ranch mix too and will never go back again. I usually put all the ingredients, except the powdered buttermilk, in a spice grinder to reduce all the spices and herbs to a fine powder. That way it blends better with the butter milk and stays mixed. Other wise the herbs seems to always split and you always have to mix the mixture.

I make my own ranch powder, taco seasoning, onion soup mix, instant vanilla & chocolate pudding mix, cornbread mix, chili seasoning. Will be making homemade cake mixes for gifts this year as well. Would like to make up brownie mix also ~ 💗 Keep up the awesome job you're doing, thank you! I would like to see fajitas mix, sloppy Joe mix, onion soup mix, and anything else by clubhouse. I noticed they changed a lot over the years and quality is going down hill....to many fillers. Thx

Yes, you need a freeze dryer!. I love mine. Also, if you add arrow root powder to your taco seasoning it will thicken up nicely, just like store bought.

I make my own Italian sausage blend. And I make my own sausage. And for those of you who are vegan or vegetarian and miss Italian sausage you can use mushrooms ground with the seasoning to make "ground sausage" for pasta sauce.

​@@ingerhaugland6763 I do it mostly by feel so amounts are guesstaments. 1 cup of whole and mashed fennel seeds. 1 cup total I just pound them in a bag and what happens happens but I try to get it evenish. 1/2 to 2/3 cup ground fennel seeds. I use a coffee mill or a blender to make powder of them. 1 Tablespoon of sugar, I use demerara sugar but regular is fine. 1/2 cup onion powder, 1/2 to 1 cup garlic powder, 1/2 cup salt, I use pink himalayan but to each their own, 1/4 to 1/2 cup pepper corns milled in coffee mill or blender, I use this method because it makes the pepper more potent.So start low go high, This makes it sweet. To give it some (read very little, in my opinion, heat) add 1 Tablespoon of hot pepper flakes or ground cayenne pepper. This to me is sweet. I use more for some folks but again how much heat you want is up to you.I add more for hot but some people are anti-heat in their sausage. I used up to 1/4 cup of hot pepper flakes, my personal limit. I vary the amounts because I just eyeball the measurements I just used the above to make more about a week ago.Feel free to adjust any of the ingredients. I mix this all in a quart canning jar but any jar with a tight lid will do. Can use plastic but you won't want to use it for anything else because the smell will infuse the plastic. I use 3 Tablespoons per pound of meat or ground mushrooms but I like alot of flavor so I would add 1 Tablespoon mix it in and smell how the flavor seams, Good Luck and enjoy!

Would you be willing to make a seasoning salt blend? That is probably one of my most used spice blend! Also, when you started your garden (I want to start a small one) were there any books or websites you found especially helpful? I'm so thankful that I found your channel, you have given me so much motivation to branch out in my cooking. I love how real and relatable you and your channel is. When gifting, I think it’s a good idea to list the ingredients on the jar with a label. My daughter is highly allergic to cinnamon. I make my own taco seasoning and a couple of others as well.

omg ive not met someone that is allergic to cinnamon! I am HIGHLY allergic like epi pen allergic. i used to not be but prolonged exposure in a bakery changed that. and its such a common allergy so it sucks hardcore

@@pinkiedoughnut0420 I am also allergic to cinnamon! Not to that extent, I'm just before that. My throat tightens but doesn't seal up. I also get a rash and 'cold-like' symptoms if I inhale it. Super 'ick!' situation. It's one of the more rare one's, I think. I have to hold my breath going into the grocery store, every x-mas, because of the pinecones (and other products) that they stick just about everywhere! That stuff gets on other items that I end up touching and then I have to hurry up and use a wipe on my hands. Pre-pandemic, I got some mighty strange looks. Some people even asked me if I was OCD. They knew what OCD was, which is good. And then I had to explain and this blank stare would come over them.

Yes, yes, yes!! You don't need a freeze dryer. A good old fashion dehydrator works. We use it every season just for our chives!

Another channel I follow, living traditions homestead, have a freezer dryer and they love it. I’ve seen them do raw eggs, soups, veggies, etc. I make homemade season salt and fajita seasoning along with taco. Going to try yours as well. I like the idea of leaving the salt out. I have it in what made and the dish was over salted due to other ingredients.

I love watching Living Traditions Homestead. Kevin and Sarah absolutely swear by their freeze dryer. It's a bit expensive, at $3-4k each, but if you dehydrate and/or make a ton of powders, it is worth it.

YOU can also get a lot a seasoning salts recipes from. The Elliott homestead shae is awesome with everything homemade from scratch. You remind me of her. She has 3 kids.a market garden and was a florist. She knows a bunch about bread baking from iron flour. Ancient grains.she lives in was st. Close to you. She also does a cooking channel. Becky she does azure standard to. They have chicken s. Her and her husband do a lot on a small bit of land and shr does the Robert(?)dowdy method kinda what you do

I just dried my chives in my dehydrator 2 days ago and they came out perfect. I just put the cut up chives on parchment paper and dehydrated them on that!

Freeze dryers are expensive…having said that, we bought one last year. That puppy has been freeze drying since we bought it! Having said that…freeze drying garlic, onions, or any “onion type” herb or veg is not a great idea. It will flavor every other thing you freeze dry for 4 or 5 cycles going forward. Freeze dried veg is lovely, broccoli, cauliflower, crookneck squash, sweet potatoes, EGGS! All these things are lovely in the freeze dryer. Candies like Skittles, taffy, candy bars, ice cream sandwiches, peeps, these are fun. We tried them once, but prefer freeze drying meats, eggs, casseroles, and things we would only need to rehydrate to eat.

I’ve never freeze dried my chives. I bought a large square cheap ice cubed tray, two actually. I rinse and towel dry the chives, then cut into tiny bits, spread evenly into the cube trays, then fill 3/4 with olive oil. Then freeze lasts all year. 🤔🤷‍♀️💋❣️😉

FYI *Maltodextrin is actually a polysaccharide, which is a specific type of carbohydrate made from a cluster of sugar molecules that are all bonded together. Generally speaking, maltodextrin is a starch that's made from multiple sugars*

I started making my own Taco seasoning this past year from a recipe online. It doesn't have cinnamon and only made enough for 1 batch of Tacos. I made a bulk batch so I wouldn't have to pull all the spices out each time. I store mine in an airtight Tupperware container. So easy and so good. My husband and I don't use Ranch dressing but we do use Sour Cream and I am going to try your Sour Cream recipe. I spent yesterday making Freezer meals. I've done it before but you have inspired me to start again. 💖💖💖

I make my own chili powder precisely because the stuff you buy commercially is usually salted. I prefer it unsalted so I can control the amount of salt. I got tired of trying to make a pot of chili and having it get so salty in order to get enough chili flavor. So I've been making my own for years. So I'd be using that in my taco seasoning. Now, I don't know that I'd care for as much smoke flavor as all that smoked paprika is going to bring. I would probably use good Hungarian sweet paprika in mine. Then, if I wanted to add just a hint of background smoke I'd put a little chipotle powder in. That's basically smoked jalapenos that have been ground up to a powder. A little of that will add the hint of smoke and also just a touch of heat as well. Good recipes!

I use taco seasoning so much, I'm so glad for this! Also, I don't know what you do to preserve tomatoes, but if you do peel them & usually just compost those peels- try to dry them instead. It's supposed to be filled with really good tomato flavour!

Just be careful with this; some people have a GI sensetivity to tomato skin. Sounds weird, but apparently it's pretty common 🤷🏽‍♀️

Chives in a dehydrator tend to turn brown. Must use a lower temp, nothing above 115F. My best results come from lining a half sheet pan with a linen tea towel and laying my chopped chives on top. In a sunny window they dry in about 1 day.

I've been doing it for the last 3 years and mine have never turned brown so maybe it just depends on how long you have yours in for, however if you dehydrate them in the oven they tend to turn a little bit tiny bit brown but if you dehydrate them in a dehydrator I've never had them turn brown at all.

I make my own 'Mediterranean' green bleed. Oregano, parsley, thyme, peppermint (I use tea), basil. I omit rosemary and sage because I hate grinding rosemary and I'm allergic to sage. It's best to soak it in olive oil and then slather it on some chicken. I love to put it under the skin because it gets the skin thoroughly crispy without drying it out. I don't use pepper as I'm allergic to black and white pepper, too, -.-'. I use the Pioneer taco packets, I admit that it's just for the convenience. However, I dump it out of the packet and spoon it up as I want it. I don't need to use four TBS of the stuff if I'm cooking for 1 person! It cuts the sodium by a lot. I used to have a lot of bulk spices but then I had an illness and I parted with all my 'reds'. Probably around 50-60$ worth of spices that I gave away. Le Sigh. But, I'm better now, so I might try making my own mix. I certainly love my taco meat (I just eat that by itself as a snack).

Once I had to go to a salt free diet I learned how to make a lot of salt-free seasonings. So now I make my own fajita seasoning, taco seasoning, substitute Old Bay seasoning (for my zucchini crab cakes - crab free), and some salad dressings. They don't take that long to make and you can have them for quite a while.

Sorry to be late responding, under the weather for a few days. 3 Tbls celery seed, 2 Tbls ground bay leaves, 1 Tbls dry mstard, 2 tsp ground black pepper, 2 tsp ground ginger, 2 tsp smoked paprika, 1 tsp white pepper, 1/2 tsp garlic powder, 1 pinch nutmeg, 1 pinch ground cloves, 1 pinch allspice, 1/2 tsp crushed red pepper flakes, 1/2 tsp ground mace, 1/2 tsp ground cardamon, 1/4 tsp ground cinnamon. Combine thoroughly and store in sealed container. Adjust as needed.

Thank you again Becky, I really appreciate that there is no MSG in the ranch mix, reason is, MSG gives me bad headaches. I know I love this recipe already. I never buy Taco Seasoning, always mix my own ingredients when I make my Tacos, never leave out the Cumin and Bay Leaf. Thanks 😉😋😊

@@phoenixx6756 I’ve had migraines for over 25 years and technically there is nothing wrong with MSG. It’s just sodium and umami flavor. When people have too much, the overload of sodium is what causes the headaches/migraines in many people.

@@phoenixx6756 too much sodium gives everyone headaches. It also leads to greater dehydration, which also can cause headaches. MSG is medically proven not to be something you can be allergic to. If you have had cheese or tomatoes, you have had MSG. It is often very psychosomatic though, and its incredibly hard to break that thought pattern to the point it becomes a real problem.

I literally just bought a Harvest Right Freeze Dryer and am waiting on it to get delivered. I watch 3 other homesteaders who have bought them and love them. It is a really big investment but from what I have read and seen on KZbin it is definitely going to be worth it. Freeze Drying supposedly saves like 97% versus dehydrating that supposedly only saves 60% of your foods nutrients. I do believe there will be a time and place for both. Because it is a huge investment it took a lot of saving and research for me to finally pull the trigger.

You amaze me! I have been making my own spice mixes for years. Making your own is superior to store bought packs and way cheaper. I buy my single organic spices in bulk and make my mixes about 2 times a year. I hope everyone gets on board. They are much better tasting and no chemicals! You go GIRL!

I recently started making my own chili powder as well. I was surprised when I read the ingredients label on the store bought ones. I make all of my spices mixes salt free if possible because we're trying to cut down on our salt intake. I like the idea of making these for Christmas gifts. Thanks for the inspiration and the recipes!

Pro tip: mix bulk dry recipes in "parts" so that you can use ANY container to make the recipe, be it a bottle cap worth or a gallon. 3 pts parsley 1pt chives 1pt dill 1 pt onion powder 1 pt garlic powder 1 pt dried onion flakes 1/2 pt black pepper 1/2 pt salt 4 pts buttermilk 6 pts chili powder 1 1/2 pts paprika 1 pt cumin 1 pt coriander 1 pt garlic powder 1 pt onion powder 1 pt mexican oregano 1 pt salt

I'm glad you're learning to do this too. Yes, we have been making all of our own spice blends, sauces, and much much more over a decade now. I'm proud of you for sharing this and inspiring more people to take on this new life style. It truly is much healthier and it really doesn't take but a couple extra minutes.

I have garlic chives which like to be harvested monthly and grow right back, but I always clip them with scissors into a jar and freeze them. They retain their color and you don't have to thaw them when using. Just take out a handful and throw them in whatever you're cooking. I would assume regular chives would be a similar process?

Normally the expiration on the box of dairy. I have had ranch mix in my fridge for over a year and it's still good.

I’d just like to mention that MSG doesn’t deserve its horrific reputation. Much of the stigma stems from xenophobic roots. Is it organic and natural in HV ranch powder? Likely not. But it’s a naturally occurring compound. I would encourage people to look into the history for themselves. I find MSG to be a valuable part of my spice cabinet. It’s not the scary additive that it’s been made out to be.

I have to disagree with this comment. I have family members who have severe GI issues when they consume MSG. It has been going on for years. We avoid it entirely.

I found this video a while back ago and made the taco seasoning… almost done with the jar and came back to remember the ingredients. SOOO YUMMY! I was so unsure of the cinnamon but will never leave it out now! ❤

Becky…. This is the best taco seasoning recipe I have ever tried. The cinnamon adds such a delicious flavor. I love that this is also salt free. With all these wonderful spices in my opinion…. Salt is not needed. Thank you for this recipe. I love watching your videos.

You should put tags on it for directions on how to make ranch dresssing and directions on how much you need to add to equal a packet from the store. For the gifts

Hi this is Sue, l do chives all of the time, and they dehydrate just fine, l have a couple of jars in my pantry, But l am definitly going to be making the taco and ranch dressing, l hate buying that stuff, your so right, all the chemicals are things we don't need in our bodies. Thanks

I make all my own spice seasonings. I make taco seasoning, creole seasoning, meat masala, garam masala, and another curry powder I use to make channa masala with, I do all kinds of bbq rubs and a veggie broth mix. Indian spice blends are fun to make and are way better than anything you will ever get in a box in the store. I am going to try your ranch seasoning. I want to try my hand at jerk seasoning. I have a good supply right now, but when it’s gone I will make it.

Hey Becky, I am just seen your video.. great job. Chives .. I am drying the chives from my garden just on my table. I cut it and put it on papertowls and air dry. It works.. I had tried it first in the food dehydreter.. thats a no go. Chives in, straw out. I do make my own spice rubs for meat, pumkin spice, pie spice, plummus spice, taco spice. Ether I dont get the finish spice in germany or they just are very costly. I get my spices at our farmers market or internet. Thats not as pricy and I get whole spices and grind them when I need them. Take care and stay safe 🙂🌻

I've made both of these. Ranch seasoning is a hit. I wasn't a big fan of the cinnamon in the taco seasoning but my family didn't even notice it. I think I might leave it out next time but overall great recipes. Thank you!

Oeh, don't, you'll miss it if you leave it out. It isn't sweet, it's just that we are used to it that way. In other quisines it's just considdered a mellow warming aromatic spice.

She has a fantastic approach, and talks about the nutritional differences between canning, dehydrating and freeze drying in many of her videos. She has a fantastic approach, and really gets into the nitty gritty of it all.

Save and dehydrate your tomato skins when you are canning, pulverize in your blender and add 1/4 c of the powder to your taco seasoning mix!! Total game changer in flavor ! I also add it to other it to other dishes for a pinch of flavor!

Perfect timing on showing how you make your homemade dried seasoning mixes. Awesome powdered seasoning recipes! I've been wanting to make my own powdered ranch dressing because I don't want any natural flavors/flavorings or things I can't even pronounce in my food items. There are way too many preservatives in foods today & I try to avoid them whenever possible. I'd love some powdered seasoning mix ideas for steak, chicken, and 🐟 fish 🤭 & Italian dressing, not the sweet kind though.
