Soak the beans overnight and rinse before cooking. Learned this, while working in Mexico, from a beautiful abuela (grandmother) who was the best cook I’ve ever met. This is to help with gas and digestion plus they cook faster. Just a thought, luv ya Sam.

@@jesseg8298 I always soak the pinto beans. I don't know if it aids in digestion, I don't have three hours to allow dried pinto beans cook. Who had the time to cook anything for 3 hours? Also, I would suggest adding black pepper and garlic powder to the cooking means. About 1 teaspoon of garlic powder and 1/4 teaspoon of black pepper per pound of dried beans.

Always soak the beans. You'll never get the texture perfect from dried beans, they will be harder to digest, and soaking helps remove some of the anti-nutrients from grains and beans. Soaking is also very good for nuts. It's not just latinos, all traditional cultures that make heavy use of beans encourage soaking.

I make refried beans at least a few times a week. I give you props for not using canned pinto beans. But I think there is something therapeutic about using the masher. Also if you dont have bacon fat you can use lard. I like to cook the bigger green onions in the lard then remove them then take some jalapenos and prick them with a fork and a whole clove of garlic and let them cook in the lard a little bit before adding the beans. Then i smash the garlic in with the beans. I like the jalapeno smashed in it as well but not everyone can handle the heat. So if you dont want all the heat you can remove jalapenos and serve them on the side with the green onions.

I've been cooking for 35 years, and I'm real old school, but I honestly don't see the advantage of cooking your own beans when these days some of the canned are of extremely high quality. I typically pour off most of the canned broth, sometimes even washing it all off. But I find the time saving very much worth whatever diffrence in flavor. Now, if I'm making pinto beans with salt pork or smoked ham/hamhock to serve as a side or over cornbread, then it's GOT to be from dried beans, simmered slowly all day. As for the masher and the refried beans: 100%, absolutely! Just cringe when I see people "whipping" them with motorized tools! lol.

Store the excess bacon grease in plastic ice cube trays in the freezer. When one is needed for cooking, just pop one out and add it to the pot.

Save some energy and soak for a few hours but add 1tsp of bicarbonate of soda. I put some to soak before going to work then add to some fine chopped sweated down onions with Cumin and white pepper and then salt after simmering for twenty minutes. The logic for salting at the end is salting early on hardens the beans. I do a simerler thing with chickpeas but they only need half the bicarbonate of soda.

Soak the beans first always. Makes a more tender bean. Also if you add a teaspoon of dry ginger it will help beans be less gassy. This really works. It does not alter the flavor. We never actually cooked beans just to make refried beans, they were always leftover beans.

Yeah my mom had a tin container that had a little strainer in it and it said grease on it. And you kept it on the stove. This was in the south of course. I found a similar thing it doesn't say grease on it and it's taller but it has a strainer and you can pour hot grease into it.

Soaking or not soaking legumes is OK phitates are destroyed almost 100% in the cooking process. What gives you gas is the lack of intestinal Flora which you have to build. You have to eat regularly to get use too. As an advice from a bean consumer, stick to one or two kinds of beans, because as you change the beans you will be gassy again lol.

Here's one for ya,.....I learned it from my cousin Johnny, who learned it from my cousin Dave,....if I remember correctly. Just take a stack of double stuffed Oreo cookies (4-5 or so) and place them in a tall drinking glass. Then pour in milk, (whatever kind you like.) just enough to cover them, then take a spoon and eat it like cereal. If that isn't a tasty desert for you, then I don't know what is.

Use lard as your fat. It is the authentic fat to use making refried beans. Personally, bacon fat is too smokey and takes away the authenticity of the refried beans...it's more gringo, but it still tastes good. Living in Ft. Worth, we smoke a lot of meats, especially brisket. A sprinkling of Cotija cheese or Queso Fresco cheese should be used for finishing off these real deal beans. Fresh flour tortillas from a Mexican market would be a good find. They are better than supermarket tortillas. After all this trouble of making from scratch, go get lard from the supermarket. It's so worth it. I don't consider vegetable oil an alternative, after spending 4 or 5 hours cooking them. My husband makes a big pot of beans every other Sunday.

Soak your beans people. Our ancestors didn't soak them overnight because they enjoyed it or had nothing better to do. You don't soak them for texture or flavor, you soak them to make them healthy and nutritious to eat.
