Everyone has their own way of preparing any recipe. She shares with us , her way here style of cooking. I don't understand those who people who only comment to be rude or criticize. My re-fried beans are prepared differently and to me they are to my liking and to my Families liking. I use fresh garlic, a quarter of an onion, salt.And after they have cooked I drain them and put them back on the heat with a bacon fat or lard. You can of course substitute for a healthier choice. ( I don't make them too often) and mash them and lower heat and let them re-fry. Once they slide off of the sides of the pan they are done! But that's just my way. So to each there own!

Agreed. I crockpot mine overnight after soaking them, then I mash and re-fry with bacon drippings. It gives them a wonderful flavor. Like you said though, to each their own.

Hello Rockin, I have been cooking now all of 30 days. Your recipe is my fifth attemp at cooking from KZbin. First I made beef stew came out as only fair. Second was Chili can out too spicy but better than fair. Third Taco's awesome. Fourth homemade BBQ sauce with wings came out better than the Tacos. So tomorrow Sunday Refried Beans wish me luck. I,m 61 years old and I will be a great cook very soon. I hope.

Just some ideas you might consider playing with. I'm with you up until the part where you pour the oil directly into the boiling beans. I learned how to make authentic refried beans from my mother in law who was born and raised in Zacatecas, Mexico. She taught me how to make them and though mine never quite come out as amazing as hers, they get close enough. She pours her oil in a cast iron skillet, and then slowly removes the beans with a straining ladle. Dropping the beans slowly over time into the sizzling oil until they're all in there. Then she mashes them up to blend them with the oil, which is much more of a frying kind of method than what's going on in this video. At that point, she begins to pour in some of the brown juice to get the consistency as she wants it, but keeping in mind she'll still add a healthy portion of monterey jack cheese, so leave it just the slightest bit thicker than you'll want it by the end because the melted cheese will moisten it up a little bit too. That's all I would change from what you're doing. All in all, nice video.

For old beans I use a pinch of baking soda. Soak them overnight. No problem. "Old" beans are simply beans that have lost their moisture content. Beans are never past their sell date. They last indefinitely. I cook beans in chicken stock with onion and garlic and chunks of rendered pork fat. It gets all blended in with the hand blender. Season with cumin, coriander, black pepper. A dash of tequila. A touch of mesquite liquid smoke. Top with shredded sharp cheddar and finely diced scallions.

Leon Davis, I always wondered about that... because I'd noticed that when I bought bagged (pinto) beans for instance, from a store like a Walmart, Kroger, Albertsons or one of those chain stores, they would take FOREVER to cook, plus would end up very "dark" in color. But in all reality, to me, they really weren't "cooked" because they were still somewhat hard/not all soft-through, as they should be. I simply stopped buying beans at those stores and made it a point to only buy beans at any "hispanic/latin" grocery store (if you know what I mean), and they're usually a lot better, because they're "fresher" (don't know if that's a term to use for that, lol). But thanks for the tip, sir. So you say the "trick" to THAT would be a pinch of baking soda (would that be, as you're cooking them, OR soaking them?) and to soak them overnight, right?

Sylvia Rodriguez Back in the mid-60's I went to a college in southern Arizona. A couple of professors went exploring in the hills and in a cave up in one of the mountains nearby, they discovered a clay pot with beans. They brought them back and planted a few of them. About half grew. They called them "Miracle Beans". (it was a religious school). Those beans were maybe a thousand years old. They served them in the cafeteria. Now those are some old beans! For old beans there's nothing wrong with filling a mason jar about halfway and the rest with water and putting 'em in the fridge for a week. Or more. Won't hurt them at all. In fact, if they become a bit fermented they'll cook easier. And fermentation adds an interesting flavor. Put your spices in during the soak. Cumin. Coriander. Tumeric. Granulated onion and garlic. Whatever. Use filtered water. The crap in tapwater is bad for beans. And for you. Keep the toxins out of your colon. Put the baking soda in during cooking. Maybe an eighth of a teaspoon. It's also an old trick to reduce flatulence. My grandfather had an old rhyme... "Beans, beans, the musical fruit! The more ya eat, the more ya toot! The more ya toot, the better ya feel! Why not eat beans for every meal!" I've been eating beans so long, I no longer have gas. At all. Have a pot going now.. Red beans. . .

In 2022 I tried cooking beans that expired in 2016 and they never got soft. So I researched online and finally came across the Baking Soda trick. It says to add baking soda to the cooking water. But I added it to the soak water. And after only 45 minutes of cooking, they were already getting soft. I still cooked the rest of the way anyway. Great trick to know. Prior to that I soaked for 3 days, cooked about 12 hours and still had hard beans.

I just made this, and am eating it now. It turned out awesome! I followed the recipe exactly, other than I also added some cayenne with the garlic and salt. I have to let you know, Robin, this is my go-to refried beans recipe. I've been using it ever since I found it and they come out so tasty. I only use a pound of beans and cut back a little on the salt, since I use less beans than this recipe shares, but I sure don't cut back on the garlic! Unlike most of the people commenting below, I actually made this recipe. It's terrific! I thought it seemed too easy to be really good, but it's delicious. I didn't soak the beans and it did take longer for them to thicken up than the video, but I think I added too much water in the beginning. I like things very salty and this seemed just right to me, so other people may want to put in half of the salt in the recipe. But it's my first time making them from scratch and I'm so happy with the result. Thanks Robin!

I made your tamale recipe with pork some time ago and saved the left over pork juice. I froze it and when I made refried beans I thawed the pork juice and added the pork sauce to beans and it was incredible. I used the same recipe for the beans that you posted, adding then pork later in the process. I just couldn't get rid of the wonderful pork juice and figured I'd use it someday!

Looks yummy!! When I make mine, I add an onion, cut into fourths, and garlic, and add it to the cooking water. They get soft, and can mash with the beans once done. Also, I add the oil near the end, and actually, on a low flame, fry the mixture till a bit thicker.

Ava Rey I was in Tijuana at my favorite café; all the ladies that worked in the kitchen showed me how to make beans so they will never give you gas. They used a 1/4 teaspoon of baking soda; i tried doing the same thing after getting back home, i just can't make beans that way. Mexican cooking is best done by Mexican hands, i am only a gringa. 😕

I have been using this recipe for a few years now and it is by far the best (the flavor is amazing). This is what I call a 50/50 recipe. The first 50% of the time, you can walk away but the second 50% of the time you need to keep your eye on it. After you add the additional ingredients (about halfway through) you really have to watch the water level or you will burn the beans (which is a waste of beans and most importantly time). If you soak your beans in a pot full of water the night before then cook them....cuts cooking time in half plus you won't have gas... also you fry up a bit of salt bacon add beans a couple teaspoons of flour and mash.....awesome!! That's how we grew up making em :)

I recommend soaking the beans overnight and pressure cook it. The same consistency can be achieved within 30-45 minutes instead of cooking it on for 3 hours. It will save gas as well as time.

Soaking overnight is not required with a pressure cooker. Salt onion water and beans for 40 minutes on high pressure and you're good to go.

@@gogadgo Soaking overnight is beneficial for getting rid of some of the "musical roots" factor. You rinse and drain the beans and put new water in before cooking. And if you want to make them almost "fort-free," you bring to a boil and let boil for 10 minutes and then drain the water out AGAIN, and begin again with fresh water.

Light olive oil doesn't have as strong a taste, I use that. Love your recipe. The only thing I did different was a bit of red pepper flakes and black pepper.

Your method produces the best ever refried beans, a deep rich color and restaurant quality taste. No more expensive dehydrated refried beans around here! I LOVE to cook and my favourite food is Mexican food. I have moved to the UK from California. The UK does not have the proper refried beans or enchilada sauce. (or anything relating to real Mexican food really.) Everything is El Paso or has corn in it. Blechk! I am now going to be making everything from scratch. I must say you have the best recipes on youtube. You are great to watch. You are very thorough, without a lot of steps. I can't wait to get started. ;)

I am Hispanic, and I have never, ever seen them done this way!!!!!!!!! You want to make beans with boiling water first!!!!!!!! Wash them with hot water first, and soak them for about half an hour or so, and then put the beans in the hot water. This makes the beans come out lighter and delicious. The way you want to fry your beans is totally different. You have to warm up your frying pan, make sure the oil is hot so the beans will have flavor and then start to see them fry when you put them in, and then start to smash the beans and you will taste and see how delicious they are. No cold water!!!

Robin you really do rock. Mexican food is my specialty. I get rave reviews for my spanish rice, pesole, albondigas, rellenos, enchiladas, etc..., but I have tried for a decade to make beans and they were always bland. I have been making your version for well over a year and have made them probably 10 or more times and they are always perfect. I can't thank you enough. My entire family devours them, including a grandson that doesn't like anything. I do add a tsp or so of hot chile powder that I order fron New Mexico. I am so glad I found your recipe!

If you are avoiding the bacon because it is pork then I would suggest trying turkey bacon. If you just want the smoke flavor with out the meat then I would suggest using a little bit of smoke flavoring. I know that neither one of these suggestions are traditional but they are only suggestions.

I made black bean refried beans yesterday, using 2 rather large onions, minced garlic, and a half pound of Serrano peppers, roughly chopped up, then once the beans were fully cooked, hit the pot with an immersion blender and they turned fantastic, will be using them on quesidillas

True, but not everyone cooks that much bacon or knows to keep bacon for other cooking these days. Also it's totally acceptable to use any pork fat. Some would say goat fat as well. A real mexican uses whatever they can get their hands on to make their food. If corn oil is what she has, then she's making some refried beans as true as she can.

But these were not refried. These were beans. After you boil the beans for breakfast, you fry them for lunch. And after your lunch fry, you fry them for dinner. Thus the cycle. Hence, the name.

There's nothing "refried" about these beans... If you want another level of flavor, heat a deep skillet with some corn oil, when hot, add some chili powder and small diced white onions, cook until onions are soft, then add your cooked beans. Now you can call them "refried"...

When boiling the beans, have salt, baking soda, onion, garlic, chile pepper, some bacon, etc. right from the beginning. Gives the broth great flavor. Then finish off with the second mashing/cooking.

I'm so glad I found your video. I am currently soaking pinto and black beans (separately). I have made refried black beans in the past, because the store didn't have pinto beans for ages. They were very nice. I'm trying to save money and reduce my intake of red meat, so now I can cook up a batch of both pinto and black refried beans and use them a couple days per week. I like to soak my beans overnight to reduce cooking times. Looking forward to trying your method.

+Kat Caller Believe it or not, there is dirt and rocks in the canned beans as well. The difference is that they make them by the ton, so they do not take the time to hand pick them out. You may not see them because by the time they are done, they may have dissolved. Occasionally, people do find small rocks, dirt, bugs, etc., in canned beans. Sounds disgusting, but the Food and Drug Administration says that a certain amount of contamination is unavoidable in commercial food processing, so it allows for a small amount of "filth" before taking action. You might want to rethink those beans.

+Kat Caller You can go through each bean one-by-one. My mother used to do this. It's good to do if you don't trust yourself with quick handful-glances, like me, haha. This way you get to control everything that gets put inside your beans, including the salt.

sometimes I shake my beans in a colander that has holes that are not as big as the bean itself. That allows the little Pebbles and dirt to fall through but not the bean itself. It seriously takes less than 30 seconds

Hi Robin, No, I have not tried any other recipes yet, but I plan on doing so. Next one I'd like to try would be one on your enchiladas and enchilada sauce. Also, I plan on trying your tortillas in the next week or so. As I side note, the following day after having tried your recipe, I asked my next door neighbor if he would like a plate of your beans with some Mexican rice that I had made. I pulled it out of the fridge, re-heated it in a double boiler and gave it to him with a sour cream topping on the beans. He absolutely loved it. I gave him a large portion of both and he ate every last bit of it - said it was fabulous. Again, I thank you for the video and I've subscribed to your channel and will continue to try your amazing recipes. You're a very good teacher. Question: do you run your own restaurant or food truck? I made this recipe yesterday and they were delicious. I threw in a couple strips of bacon after I seasoned them and then removed the bacon after a while and it added a really nice flavor. We had a lot of beans left over so I used my foodsaver and packed the beans in a couple of bags and put them in the freezer. Now I have beans ready when I need them. +Josh Swartzberg Ah piss on the food snobbery, elitist b.s. With most recipes, I prefer to use fresh garlic or onion. And for beans, I like to use rendered pork fat or bacon fat. However, I'm not a food snob, so I am not going to knock someone if they prefer to use some garlic powder and vegetable oil. And there is nothing wrong with using powder items in certain recipes. And there are many items that are excellent canned. I use San Marzano tomatoes in a can and they are excellent. If you want to be a food snob, self righteous food elitist, more power to you. But be careful walking around with your nose stuck up in the air like that, you will start walking into a lot of walls.

I use garlic powder and canned goods often but if I want to do it 100% homemade, find a recipe that's not I'm free to comment about it. They wouldn't bother in mexican food, least down here in the southwest they sure don't, beans lard, salt and they would definitely use powdered garlic (not garlic salt) but if one wanted, so it mixed in well one could easily use garlic turned into a paste with the side of the knife and some sea salt..

I also do my beans like this but I will chop an onion, 2-3 cloves garlic minced and chop some bacon and put half the onion and bacon in the first half of the boiling time then I will season and add remaining onion, bacon and garlic and finish cooking. I had made enchilada's the day before, and I had cooked my corn tortilla's in Canola oil to soften them before I used them in my recipe. Anyway, I had about 1 cup of oil left with the flavor of corn tortilla in it. I used this oil the the next day when I made beans. Wow the flavor of the beans was just what I get at the restaurants! I am so happy I did this. Usually I use Manteca. I was proud of my beans that day!

i do something similar to this cooking process as i cook my bean's, but when it comes to the oil i use rendered pork fat mixed with a little bacon fat. and i use a hot cast iron skillet and slowly add the beans and the water from the beans as i cook them to give them a more of a "FRIED" taste and texture to the beans. nothing is better then the taste of the pork and bacon fat, gives it the one step kick to the end product. i love the video and keep up the great work

I could not believe that you could actually boil beans, especially without soaking them, and they would get done. I tried it and it did work well. Thank you. I still soak my beans overnight, but I boil them too. Great recipe!
