INGREDIENTS: 2-3 pc bacon 1 large onion 1 cup "long grain" rice 1-3/4 cup chicken broth 2/3 cup tomato sauce 2 pablano peppers 1 large can pinto beans huge flour tortillas SPICES: oregano cumin onion powder garlic powder chili powder RICE: dice onion sweat onions w large pat of butter / oil for about 5 mins add rice and stir add "some": oregano, cumin, onion powder, garlic powder, chili powder add 1/3 cup chicken broth add tomato sauce bring to boil cover with 15 mins to simmer PEPPERS: blacken peppers on grill or (?) then leave in bag for 10 minutes to steam (?) remove blackened skin if you can! may run under water to do this. may be disaster. slice into small strips BEANS: cook bacon and remove bacon just keep fat. eat bacon drain pinto beans but save liquid add pinto beans add "some" garlic powder, cumin add dash of salt and pepper stir everything and mash w/potato masher add 1/2 cup of juice from can cook until ...(they look like refried beans?) BUILD: heat tortillas add beans add pepper strips add rice add cheese add beans again roll that shit up optional toast burrito in pan to brown sides

Hey guys. I missed you and max so much. I just spent the last 16 days in the hospital with 4 of those days being on a ventilator thinking I was going to die. All I thought about while I was there was how I wish I could be home in my back yard grilling. And watching Sam the Cooking Guy. I’m a covid 19 survivor and proud of it. Now I feel like I can handle most any health issues that come my way. I’ll never complain about being sick again. Any way, I’m thrilled to be home where I can watch your videos again. In a day or two I’ll get outside and grill. Thanks for the inspiration brother. I’m behind several videos but tonight I plan on getting up to speed.

I have a feeling those peppers didn’t want to give up their skins so easy cause he did slightly lower heat with the grill lid closed. Any time I’ve seen this done where it worked, it was over an open flame and had to be constantly turned. Could be just stubborn peppers too. What do I know haha

Not sure if it would make that much of a difference; but I always put the poblanos back in the plastic bag that I bought them in to rest/steam/cool after charring (even giving the inside of the bag a couple spritzes of water), and tying it off... and then 15 mins later rub the peppers while inside the bag to remove the charred skin. I would think a paper bag would just absorb a lot of the moisture the peppers are giving off, making the skinning more difficult...

@@mattyo71 I am not sure what bug you have up you ass, but my comment is FOUR YEARS OLD. Now here is some schooling for you. Pinto beans, I don't care where they come from a bag or a can but get them. If they come from bag do what you are supposed to do to make them like what is in the can. Put oil in your frying pan, we use olive oil, but it could be grease from your bacon, it could lard. Use the foodlube of your choice. get it almost smoking hot and dump your beans in there. Get your masher, mash the beans. BOOM! Refried beans! This was the recipe handed down to generations of men looking for bean dip at Savemart Supermarket in FRESNO. The originator of the recipe was Armando from the meat counter who retired in 2014. Have a day Dr. Frakenstein

Poblanos are the fresh green pepper, once they’re dried and change colors they are referred to as a Chile Ancho. Just like a dried Jalapeño is referred to as a Chile Chipotle. A Chile Pasilla is the dried Chilaca pepper. Who knows why they call them that🤷🏽♂️ all I know is they taste great!! Love your videos sam!

Poblano peppers are known as ancho chiles when dried, and to make things more confusing, the fresh version is often incorrectly sold as pasilla peppers in America. Pasilla peppers are actually the dried version of chilaca chile peppers, a similar Mexican pepper that is skinnier and often spicier. - taken from google. The more you know!

Simple refried beans are OK but I like to take it a bit further with some bacon grease or mayo for a 'lard' component to make them more creamy and add flavor. Thanks for the rice ideas - I will b sure to try those since I haev yet to make a decent Mexican rice at home.

So I made this today, but replaced the chicken stock and tomato sauce with bolognese sauce from the pantry and beef stock as liquid for the rice. Rice, seasoning and onions still did their thing and became geogeous. Fresh pressed garlic also beats your powder. I didn't have peppers and tacos, but creme fraiche. The refried beans came canned and where Chipotle flavored, so what. In hindsight it was actually kinda nothing like the burrito you did, but in spirit. It was still amazing. :D Thanks for sharing!

Great recipe, Sam. If I wanted to keep mine vegetarian, which oil (or butter) would you recommend for the beans? Obviously, I know I can substitute a vegetarian stock instead of chicken stock for the rice. Thanks for the content.
