When I worked at the cheese dept at a whole foods, a lady told me that she would mix a bit of almond extract on her ricotta. Never tried but the ricotta was pretty spectacular 👌.

I love all your videos. I’ve watched them all at least twice. But I have to say I was laughing my head off on the mozzarella and ricotta cheese video you obviously took down. I loved it. I could so relate. The other video that wasn’t funny but I couldn’t help but laugh was the one you said your bees we’re trying to kill you. That was horrific how many stings you got. I felt your pain. But I love how you find humor in everything. I hope you do the January challenge again. They really help me. Thank you

If you were to use lemon juice how much would you use?

I actually would NOT substitute lemon juice for citric acid. You can't be guaranteed the level of acidity with lemon juice, and even with bottled juice where the acidity is more consistent, citric acid is more concentrated. I do not have experience with using lemon juice in place of citric acid, so I can't confidently recommend an amount or tell you it will work the same way.
