1. Preparation of the Ricotta Gelato Compound
Start your own ricotta ice cream recipe by collecting all the necessary ingredients. Put the milk, sugar and glucose in a saucepan and turn on the heat. Mix well and bring the mixture to a temperature of 80-82 degrees. It's important to monitor the temperature to ensure that the ingredients melt properly and give your ice cream the ideal creaminess.
2. Adding Ricotta and Cream
Once the desired temperature is reached, remove the saucepan from the heat. It's time to add the ingredients that will give your ricotta ice cream its distinctive flavor: cream and sheep's milk ricotta. Mix well, breaking up the ricotta with a whisk, to distribute the flavors evenly.
3. Blending of the compound
Now, to make your ricotta ice cream even creamier, use an immersion blender. Blend for about a minute, or until the mixture is smooth and without lumps. This step is essential to obtain a homogeneous and pleasant texture on the palate.
4. Cooling of the Compound
Once your mixture is smooth and well mixed, it's time to chill it. Pour the mixture into a bowl, cover it with cling film to prevent the formation of a skin and let it cool to room temperature. After that, put it in the refrigerator for at least an hour and a half. The colder the mixture, the less time it will take for the ice cream maker to cream your ricotta ice cream.
5. Creaming of ice cream
After cooling, the mixture is ready to be transformed into ice cream. Remove the cling film and pour the mixture into the ice cream maker. Close and operate the ice cream maker. You will have to wait about 30-40 minutes, or until the ice cream becomes thick, full-bodied and very creamy. If you don't have an ice cream maker, you can simply pour the mixture into a container and place it in the freezer, stirring it every half hour until it reaches the desired consistency. That's it, your delicious ricotta ice cream is ready to be enjoyed!
