Wslm. After you make the last 15cm stretch, you need to add it to the oil right away and fry. I lift the nest out of the oil mixture, complete the 2 x 8 turns and then stretch 15cm. This process takes less than a minute or so. Frying does not take time either. So once i turn my suterfeni while deep fryinf, i begin stretching the next one. Hope this makes sense. 😊

If you don't have a mincer, You will have to knead the dough for a good 25 minutes until its smooth, pliable and stretchy.

I am from SA, now living in Melbourne & Diwali is still a big celebration in our home! We love making all the mithai from scratch like we’ve been taught back home but I just could not get to making my favourite Suterfenni ! Every time I come home to SA, I have to buy a whole suterfenni to eat by myself🤗 I Cannot thank you enough for posting this informative video. It came out just perfectly beautiful!!! The ONLY question I have is : how do I make the Suterfenni to be soft & so white like the ones in Durban sweetmeat shops instead of the crispy one produced with your recipe ? Hi Roshini. To keep the suterfeni white, avoid frying it for too long. Once the strands crisp up, remove them out the oil immediately. Also completely dunk them in the thin syrup and drain. It takes 2 days initially to soften up. You can also add a damp kitchen paper into the container you are storing the suterfeni or cover with a clean damp cloth. This wil soften it up more. Suterfeni comes out crispy always, but the syrup softens it up. Hope this helps.

I attempted to make it today. Definently a skill and need to practice. While stretching I can see the strands but when I fried it didnt separate. Also came out brown and not white 🤔🤔🤔🤔

Practice definitely makes perfection. The reason to this was that your oil was too hot. Fry on a lower heat on your next attempt.

Yes it can be frozen after frying and draining. Add syrup a day before you would like to serve it.

If you notice that there is a little oil left behind on the suterfeni, you can drain it further on a kitchen paper for 30min more. I also like to stack newspapers under the kitchen paper to suck up more of that oil. Mine drained out well so i did not have to drain further on paper. You can also use the flour and kitchen paper method. Works wonders.
