Instead of vegetable broth in the stuffing, I use unfiltered apple juice or 1/2 apple juice and 1/2 vegetable broth. The bit of sweetness is terrific.

This is awesome!! It's a much cheaper version of the vegan roast we purchase from All Vegetarian company. As much as we love that one, it's definitely pricey. Loving this homemade alternative!

My god. I wish you guys were my neighbors. Taste testing and nice people 😊. Almost forgot - I use mushroom powder in everything these days, so maybe that might bump up the flavor? My non vegan family went crazy for the stuffing last year, and that mushroom powder I think tipped them over the edge lol.

Secret for getting rid of some of the grassy taste from tofu rinse it 3 times with hot water and the boil it in salted water for 30min-1hr water needs to be as salty as the ocean so it seasons the tofu through out. And the great thing is the pores of the tofu open up abit to allow it to take on marinades and sauces better

Looks delicious, and quite achievable. The outer crust looks very good. For serving I can imagine putting little bite-size pies filled with your same tofu and stuffing around your main 'roasty'. You always come up with these fascinating ideas, and so much fun to see what Monica thinks of it.

The secret ingredients in my family’s stuffing is a box of the Uncle Ben’s long/wild rice blend and a pound of pork sausage. If I read the box correctly, the rice mix is vegan and then I will use a chub of the Impossible sausage. This will be my first attempt of making the stuffing plant based.

I made this! Super tasty but mine came out very soft. (I only added a tablespoon spoon extra VWG-I'll add more with a little poultry seasoning in the dressing.)

I like the way you did this. The 86 Eats recipe so many of us use is similar but has a higher ratio of vital wheat gluten than yours has, which makes a firmer "meat" (although it's still mostly tofu). Maybe have a look at that recipe to trouble shoot improvements? I approve of your stuffing recipes, also; so many people make it too dry and with weird things in it! Thanks for posting : )

Hi! I’m a vegan who avoids palm oil and everyone else should too! Haha.. but that aside. I’m having trouble finding good butter replacements.. and as a pastry chef, that’s my new goal in life. If you ever get around to it, I’d love some advice on that.

Looks great. If i make this, ill add more flavour to the tofu meat by adding lots of nooch, italian/herb seasoning, garlic and onion powder, soy sauce/miso, maybe even crushed up toasted walnuts around it for the crust as well

I made this for christmas and it turned out great! Thanks for the vid! It was way smaller though, because we couldn't get a hold of more saitan, so the stuffing also went into most of the Knödel (potato dumplings). Very tasty! 🤌

A lot of the flavor associated with turkey and Thanksgiving is herbs, probably what the flavor was lacking rather than straight umami or saltiness.

I have made a seitan + tofu roast once but it just always seems like too much fuss :D I might try again this year with something new though as it is a great centerpiece for the holidays, we'll see - your test recipe made me realize it actually isn't that hard :D

Looks good. Monday Morning Quarterback thoughts: Add BTB not chicken base to tofu and possibly poultry seasoning. Thyme in any case, it just says 'poultry' to me. Increase the ratio of stuffing to tofu and roll once (minimal overlap) so it's centered. Yes, I am *that* person. I'm using seasoned stuffing cubes because I'm also lazy. Lastly, stuffing needs Granny Smith apples, don'tcha know? Props to your in-laws. If I brought that to my very old-school in-laws for Thanksgiving, it would have been the stuff of legend for years to come. Thanks for posting. Our meal is planned but I will definitely have this another time.

With BTB do you mean Better than bouillon? If yes, that stuff is so good. I also have the no beef that I add to certain dishes. But the no chicken is my favorite. I also agree with you on the centering of the stuffing. I have to have symmetry.

I recently just bought me a tofurky holiday roast & I absolutely love that because I’m single & have no friends or family so my holidays are literally just me, myself, and I but I would absolutely love to try making this if/when I can actually have multiple people over for the holidays (*in shrek voice*: like that’ll ever happen!)

Well extra firm pressed tofu(it's the one that comes in a clear plastic wrapper with very little water in it) has a similar texture to Turkey, so you can marinade it in the same seasoning and use it as a substitute for this recipe.(though you may need one of those food injectors to inject the liquid seasoning into the tofu because extra firm pressed tofu is very dense)

Maybe try the super firm tofu next time.. you could even use some of the glaze ingredients as a seasoning for the tofurky portion. Otherwise this sounds and looks great, nice work!

On using milled flax seed for egg replacement, if anyone knows Ann Reardon in a recent video she showed milled flax seeds produce cyanide when digested. Some guidance was the EU recommends no more than one tablespoon a day, and the absolute safest limit is to stay clear of 70g per dose for a 60kg person.

Ann Reardon is not a dietician or a doctor. The studies she looked at had people eating a ton of flax (70g is about half a cup, which an obscene amount). Even then, they had no side effects. Consuming flax is safe.

@@jader4357 I didn't say not to consume flax seeds, half a cup is an unusual amount sure but worth knowing about, enough that people who experiment with food would be better off knowing. I cited what she cited as examples of safe guidelines, she's not a dietician but does decent research.

@@GoPieman My objection is mostly that Ann and you imply that flax is unsafe, for example at the end of Ann's video she warns people against giving large amounts to children. I guess I just feel like the main takeaway should be that flax is safe in moderate quantities (up to a half cup per day), not that you should beware of giving it to children. Just wanted to reassure the person who replied to your original comment that flax is safe.

@@jader4357 I wasn't thinking about children, but people who might be tempted to experiment with unusual amounts e.g. using it as a part-flour + binder in one. So we might differ on what the "main takeaway" should be but that sounds like a very boring argument for something we do not essentially disagree on! You are right that I could have reassured the commenter they can still eat flax seeds (I certainly still do!) and that the safety concern is only for _milled_ flax seeds.

Looks great! I hope you let us know if you find any improvements when you make it again for the holidays. I'd be intersted to know if adding some more vwg gets you the firmer texture you're looking for. Since it's intended to be served hot, maybe a little methylcellulose might help.

love uts online--been using them for years!! i'd replace the bread with gluten free white bread and the vital wheat gluten with chickpea flour, but, other than the gluten, it looks great.

You should use the tofu roast concept and make some type of vegan beef Wellington using Impossible or the pea protein meat. This concept has alot of potential? High protein dumplings / bao ???

I made this. the first thing is two blocks of tofu and all that wheat gluten and then the cornstarch it it made this humongous role. I saw another recipe someone making a tofurky roll and they used white beans and one brick of tofu. Yours definitely needed more seasoning in the tofu. I added even more than what you recommended and I put onion powder garlic powder but it still was lacking flavor. Probably going to try the other recipe.

I wonder if the texture of the -tofu- turkey* could be improved by using soy curls instead? Could either powderize/blitz the soy curls while dry and rehydrate, or hydrate (maybe cook) and run them through the food processor until they're at a desired texture. Tofu and soy curls are obviously made of the same stuff, but soy curls would allow for more flexibility in the texture!

I've not tried it but that sounds reasonable considering how well chickpea pancakes hold together. I'm not a fan of wheat gluten's sponginess so I'll probably try chickpea flour. It's used for a soy-free tofu so it may work. Great suggestion, thank you.

This looks easier than the seitan roast as it doesn’t have to be steamed and then baked? as we don’t like the stuffing inside the roast..how about just cook them separately. Really like this video! Is the temperature Celsius or Fahrenheit?

Made this for thanksgiving yesterday. It was a hit, but I found for me at least the tofu inside the skin seemed still too, tofu-y? It was quite a bit squishy and somewhat pale of flavor. I'm curious, what things could I be adjusting to get that tofu feeling a bit more threaded and less squishy and more flavorful? Is it just a matter of adding more gluten flour to increase the texture and more of the spices for flavor? Should I be cooking it longer?

what if you wrapped it in yuba skins and then cooked it. you could probably shallow fry it after to create a crispy skin while heating it up before service.

My daughter and I were diagnosed with celiac disease, and this will be our second Thanksgiving dinner that we won't be able to enjoy a holiday roast. The rest is easily veganize and made gluten free. Can you concoct a gluten free roast too, pretty please? All recipes online are variations on lentil loaves, which does not cut it.

Well it won't be the same as his recipe you can sub out his mixture with extra firm pressed tofu(the one in the clear packaging with very little water in it) and use a food injector to add a broth made of mushroom seasoning, nutritional yeast, garlic, powder, onion powder and water to the tofu. Or whatever it is you want to use for flavoring and you will have to put aluminum over it to keep the moisture in.

Looks easier to make then most vegan Turkeys, ooh maybe you can wrap rice paper around in on the second round of baking to act as a "skin".

I priced out the holiday tofuti roast at the supermarket. It was on sale for $15.99. I remember pre-pandemic it was $10.99. I think I'm going to make mine more traditional with store-bought stuffing mix pepperidge farm. I'm not going to use all that butter or butter at all I can't cholesterol issues. This recipe trump's All of the other ideas for a holiday roast being easy and tasty. I will be making this. I like at the end Monica gives her review but she needs to be mindful of using the word LIKE every other word. It drives me crazy.
