In this two part video, I go through the step by step process of making a very smooth textured, fine crystal, and shiny whipped or creamed honey. We make two variants: natural raw creamed/whipped honey and cinnamon flavored natural raw creamed/whipped honey. We use our own untreated honey from our boutique apiary. +Mroker Thank you Mroker for your support. Unless one creates their own KZbin videos, it is difficult to understand the amount of time and effort that goes into every minute. The camera work, the lighting, sound, cables, power, hundreds of takes, material preparations, retakes, cutting and production, publishing, documenting, commenting, follow ups, and so on. It takes approximately 20 hours for a 10 minute video, especially if you are in the field, with gloves and bees all over the place, poor lighting and battling the typically unfavourable elements of nature. Can you infuse the honey AFTER it’s been whipped or you have to infuse it before you whip it?

How can you make Creamed Honey without using Seed Honey. In my country they do not sell Creamed Honey.

Well, the original creamed honey "seed", as far as we understand it, was made from dried honey, which was then crushed into a very fine powder (flower like). This formed the original very fine honey crystals, which then "replicated"their structure throughout the remaining honey. We have also heard of methods though, where people simply whip the honey repeatedly for several days in a cool environment, which essentially breaks the natural honey crystallization into smaller and finer crystals. This creates the thick yet smooth creamy consistency as well. Some of the terms used to describe this honey as listed in Wikipedia include: whipped honey, spun honey, churned honey, honey fondant, and (in the UK) set honey. +Samuel Montealegre cause a small jar of honey to crystalize. Once well crystalized crush the crystals until they are powder. Use this as your seed. Each time you make creamed honey, reserve one jar for your next seed.

I too found it hard to hear you over the music, and I must admit to doing a lot of giggling after I turned on the closed captioning...you should watch that and see what they are saying you said! I think I'll figure it out after a few watches. ;)

Do you let the jars sit open for 2 weeks to create creamed honey?

Hi Badjujuwan. In essence yes - and it needs to be relatively cool, 20C (68F)or less ideally. We mix the honey inside the jars a couple more times to stir the cinnamon through and then close them permanently. You don't want to leave your honey exposed though so always close the jars, just not fully. That way you won't get dust or insects inside. Hope this helps.

HORSE FEATHERS ! ! ! Every video I've seen on here talking about making "creamed" honey, also talks about the need to "seed" raw honey with a bit of already "creamed" or whipped honey, but it has become glaringly obvious that NOBODY, posting such videos, so far, has the foggiest clue as to EXACTLY how whipped, or "creamed" honey can be made WITHOUT the use of a "STARTER" of creamed or whipped honey. So, the REAL question remains. How EXACTLY, is raw honey made into "creamed" or whipped honey. What EXACTLY is the mechanical process/procedure, done starting with ONLY raw honey?

David Hutson look up the dyce method of making creamed honey. It starts with raw honey but unfortunately heats it.

Get natural crystallized honey and place it in a mortar & pestle. Grind the crystals until they have a fine textured feeling on your tongue (it takes Me about 30-45 min to get it right). this is your initial starter which is a small amount approximately 2oz. Repeat if you want more and you still have any strength in your arms Mix it with honey 10 to 1. Keep repeating this until you have the amount of finished product you want with starter left over for your next batch. The reason people start with purchased creamed honey is that it will take a least a month before you have enough starter to make a meaningfully amount of finished creamed honey for sale. Some people claim you need to pasteurize the honey @ 150 degrees and cool rapidly to kill any yeast spores as excess water is released by the crystallization process causing fermentation. Also 57 degrees is said to be the optimal temperature for the fastest crystallization of honey. This is not a quick process.

Thanks for the video. I must admit the narration appeared a little self indulgent or perhaps unscripted. Can I suggest you script something next time to keep you on track. Keep up the good work.

Hi Monkeyboynz. You are correct, totally unscripted as it was one of our first videos. We were struggling to manage the camera, microphones, lighting, and then working with the honey and ingredients themselves, and admittedly, the result is not as professional as we would like it to be. We keep working on it and improving hopefully, and taking extra time to script some videos too as time and circumstances permit. Thank you for your feedback and support though!

Have yet to see even one of these videos which actually shows how "creamed" honey is made WITHOUT the addition of 10% "creamed" or whipped honey as a "starter". How is the "starter" made? There must be a process where the crystalline structure is change WITHOUT adding a "starter". How was the changing of the crystalline structure originally discovered, and done.

You cannot hear any of your instructions over the LOUD guitar music. Remove the music. DIY video is useless with the guitar playing over your instructions.

Way too long winded video. Get on with it! It should not take 10 minutes to explain how to stir the seed honey into the batch!
