You can can rice. She has a video canning different kinds of rice (not dry canning). I would not recommend canning rice and beans together.

I’m an 81 year old new to can’t person. I’ve done water bath canning and I’ve had a pressure canner that I’ve never used scared of it. You are putting some sense in my head and I’m feeling like I CAN do this. I sure wish I’d discovered your videos when you first started posting. Better late than never I guess.

Last year(2020), I finally got everything together for canning. I followed your instructions and canned beans. Well, I did what you did except for labeling. I wrote "beans, seasoned". 😒. I had an extra set of measuring cups, so I drilled holes in the bottoms and use those when I fill jars, then add water or liquids that I need. I have Presto canners also.

I wish my mom was still alive she would have loved your channel. My mom canned everything. I used to love watching and helping her can stuff. My grandma had a fig tree in her backyard they would can those too. Dont know how they tasted because I didn't start eating figs til I was an adult. Her favorite was making chow chow and hot pickles.

I love to can!!!! My mom used to can over 1000 jars every year. She would can everything and as long as her garden, which was big, would produce. She cooked for workers that came to strip tobacco every year and all our relatives used to come visit a lot. My mom was an excellent cook. She taught me, my sister, my daughter and even my brother to can food. My dad would be in the kitchen helping as much as possible when he wasn't working. I have been canning since I was a kid and I am almost 69 so I'd say around 55 years at least. Another gal from Kentucky. Blessings and peace to you!

Homestead Heart. Well, today was my "do it day". I pressure canned my 1st. dry beans. I got 7 pints. I'm exhausted, but I did it. They look good. I'm so excited I don't think I can sleep. I have all kinds of Ball and Better Homes and Gardens canning books. I even have a few vintage ones. I'm not into some of these new recipes. Some yea it would be fun to try. But there are some things I want as simple as possible. So I'm following the vintage recipe and the new processing time.

LOVE your instructions! You never forget anything! Especially about how you wash the beans after soaking! I purchased a vacuum sealer for my dry beans though.... I may go back to canning them... but for now, I just seal them in a jar dry.

Your logic is the just like mine! I couldn’t see the sense of cooking beans before pressure cooking the beans! What is left after all that cooking? I didn’t want to throw dry beans in and can them, because I wanted to be certain the lectins were gone. So, soaking them overnight and pressure cooking/canning seems like the best route to prevent bean mush. How about doing some pork & beans or Boston beans next?

I'm still gonna keep trying till I die. I've got beans & im gonna soak them overnight and can with you tomorrow. Oh, btw, I found a ladle that my mom used when I was young and I'm 75 yrs old. It was passed to one of my sisters & then to the other and I found some of the kitchen stuff at her house when she passed away. I've told you um not the cook in the family but I know what the Bible says so I'm trying to prepare and if I'm not here, maybe there will be those left to have them. You &Mr H inspired me. I've been watching all your videos since last winter, early spring. I made jelly. Then You came into my life via KZbin. I bought a Presto pressure canner! I've canned things I never knew Could Be Canned! This fall, I've canned chicken, legs, thighs, breasts. I've canned deer meat, and tonight, I canned 10 pints of ground beef. some with flavor added. Tomorrow night, I'm going to make chili beans. I made green tomato relish, canned pineapple, made Christmas Jam, canned white potatoes, and sweet potatoes. I have bacon in the freezer I'm going to cook and can soon. Just wanted to say thank you for your videos, you've given me a great gift! CONFIDENCE!!! I'm a 'hugger', please ask Mr H to give you a big hug and pretend its from me, lol. I look forward to many more videos! Luv you!

PRESERVE the books (page by page) - use Exacto knife (or other sharp razor with protective handle) to slice pages out of binding and covers from binding - slide each, in order, into clear plastic sleeves that go into a 3-ring binder. That way, pages don't get worn or dirty. My friend had FIVE large ring binders set up like that with his mother's recipes - one of those binders was JUST canning recipes.

I was questioning that also. How is it that the beans that are already cooked and soft expand to fill the jar. I've never had that happen. If I use 1 1/3 cup of dry beans in the jar and then fill it to 1" head space the beans will cook and come up to the 1" head space. Don't understand this.
