Homestead Heart's Instructions 10 Grade A bean pods. 3 parts Food grade Glycerin 1 part Water Half gallon Jar Cut bean pods in half exposing seeds. Place pods into mason jar. Add 3 parts glycerin and 1 part of water. (3 cups glycerin and 1 cup of water) Place plastic lid atop jar and shake vigorously. Make sure bean pods are totally submerged in glycerin/water mixture. (Add more if needed using 3/1 ratio.) Let sit for minimum 90 days up to 6 months in a cool dark place. 3-4 times a week, shake jar for the first month or so. (My add: If you do not have a plastic lid, place a sheet of parchment paper atop the jar, then use the metal lid that came with jar). Enjoy your non-alcoholic homemade vanilla.

Thank you so very much. I have forgone making my own vanilla extract because I cannot have alcohol in the house. I do not drink but my son whom I love has been sober for 5 years and 23 days. Thank you for bringing another. ray of sunshine in my life with this recipe. I have always wanted to make my own vanilla. God Bless you and Yours

I’ve been making Vanilla extract for over 15 years. Grade B is fine for extract, the grade A beans are used for direct cooking/baking scraping the beans. I’ve made both the alcohol and glycerin versions, I like the alcohol better, because when used in cooking the alcohol will burn away. The glycerin version adds sugar to what your making, which I do not want always. The alcohol version will last years longer if you want to continue to add to it. I make mine much stronger buy adding 1/4+ pound of beans to a gallon of alcohol. Which is considered double strength, and gives the dishes a better vanilla flavoring. I use bourbon also because it gives it a richer flavor. Thank you for showing us your version.

I also use the same with bourbon. But, HH gave me an 💡. I’m going to try using older bean pods and glycerin to make vanilla bean paste. I’m going to put them in my Vitamix to break them down. Vanilla bean paste is soooo expensive.

@@PixiePrincessBrat I really like the Tahitian bean for creamy desserts like ice cream and pudding. Since I use vanilla extract 5/7 days a week, I usually make 4 gallon bottles at a time. I stop using Volka, because I found he flavor to be too weak. I’ve also used rum, which gives it a richer flavor. You’ll like the spice rum, it will be better for fruit pastries.

Another thing you can use vanilla beans for is to make Vanilla Sugar. Pour sugar into a pint or quart jar and add cut up vanilla beans. Stir well. Put lid on tightly and leave it in a dry place, stirring/shaking it w couple of times a week. I've also done this with lemon and orange peel (delicious sprinkled over cinnamon rolls). Makes a nice gift basket. Add some to cookies and cakes, too.

My first year making my own extract. I used New Guinea grade A for one jar. Madagascar grade B for second jar. I used vodka as my alcohol. I decanted after more then 6 mos, just in time for Christmas. The New Guinea jar was heavenly vanilla with no alcohol scent or flavor. Loved it. So the madagascar jar was milder vanilla scent and could still smell the alcohol. It Still gave the baked goods an ok taste. The grade A New Guinea beans made the vanilla flavor rich in baked goods. I did use the same beans again in same jars for next batch and am adding bourbon to a jar with madagascar grade b. I will continue with New Guinea grade A beans in future. Experiment to find your preferences in beans and alcohol or no alcohol. I loved the demonstration as she took out the fear and put in the FUN. Leaving for six months plus is really worth it. Thanks so much!

The extracts would be nearly priceless in a bartering situation...especially if the ingredients, etc., become difficult or impossible to get. Actually, so would common spices, so buying in bulk would be an excellent exchange currency, rationed out.

@@harborgirl8877 Yeah I made minds with 90 proof vodka and rum so I made vanilla rum Extract, Pineapples 🍍 Coconut black walnut, lemon, grapefruit, black walnut I had to toast black walnuts first, Cool down bloted some of the oil off, And 90% proof vodka, and after six months to almost 10 months I have to take them walnuts out, because they produce a lot of oil and you don’t want them to go rancid because then your extract will be bitter . next I’ll be also making it with vegetable glycerin it’s wonderful to have too, so I can have both, I really prefer the one with alcohol has a better flavor, but the Vegetable glycerin is cool too It’s nice to have a variety because the vegetable glycerin Thicker I like the consistency of the thickness, One of my vanilla extract Jars I’m a let that seep for 18 months to two years and the other ones six months and some are continuous vanilla extract, But For two years it’s even better it is marvelous, but I have the six months one too, Variety is the spice of life baby, I say do all of them vegetable glycerin and alcohol so you have different flavors and make them all! It really depends on a couple of factors. Age of the beans - PROOF of the alcohol (percentage of alcohol by volume) - weight ratio beans to liquid - ambient temperature. I've had double-fold extract made in the late fall ready before spring (I keep my home warmer in the winter than I do the other three seasons).

FYI - Glycerin is still an alcohol -- it's a sugar alcohol. It has a much higher boiling point (554F) than vodka (181F) which is typically used for making extracts, so it will not "burn off" of the sugar alcohol in cooking/baking would not occur as would the alcohol in a vodka-based extract.

@@germyw I just started this batch on New Year’s Day. I let mine steep 6 months. I’ve got a bottle of vanilla that I made with vodka that is in rotation, and will most likely be gone by July. I just keep them rotating. I use 10 beans per liter of alcohol (and not expensive liquor at all.) I spend the money for the grade A Madagascar beans, but they keep flavoring for years. I get my beans from Amazon. I slice them open, just like Mrs.H did, and give it a little shake every time I open the flour and sugar cabinet, which is surely every other day. It’s really easy and will save you so much money. Smaller bottles with fewer beans started now will make the most delicious Christmas gifts for next year!

I let my Vanilla sit in my pantry for 2 years, and I stagger the times I have made it so that a jar is ready every month, I use Bourbon for the best flavor. I give it as gifts I like having a lot on hand, even when I decant it to smaller jars it still sits in storage a good long time, Vanilla never goes bad if you use alcohol. If your beans are not soft, and pliable the quality of your extract will simply not be the best, you need to use clamped jars, both when making, and decanting your vanilla to keep the air out. I use grade B I prefer the flavor and the deep rich color.

Excellent!! I just bought some vanilla beans for this purpose. I hope to learn/master both versions of how to make vanillan. This is particularly great for that fact we might need to save our alcohol for topical medicine in a true SHTF scenario. Vanilla extract really can make a dessert go from "meh, it's okay" to "WOW this is SOOOO good!"

I switched out all my metal tops for the plastic ones. Sometimes those metal ones rust & I didn't want that to ruin my homemade elderberry syrup or my seamoss.
