When using alcohol, add a small, clean, dry chunk of oak wood in the last week or so to help tamp down the alcohol smell, helping you detect the vanilla. Don't worry if it still doesn't smell like store bought. You have the good stuff! Also, don't throw out the used beans! Google what to do with used vanilla beans. TONS of great stuff!

Those used beans will keep working for well over 20 years! Yep, you read that right...20 years! When you start getting low just add more alcohol, glycerin or whatever liquid medium you use.

@Maria Last time I made vanilla I used 7x distilled vodka in one batch and cinnamon spiced rum in another. The vodka really smells very strongly of alcohol but cooked and baked just beautifully! I'll try white rum next, thanks for mentioning it! 💛 I let mine sit for a couple years. Oh, the yum!

@@Ourquest4adventure Yes indeed! For those who don't know, just make sure none of your beans are sticking up out of the alcohol or glycerin to prevent molding. If you don't have enough liquid simply cut the beans down to fit. 🤓👍

I used vodka. Some people use their favorite brand. Some chose cheaper brands. Your choice. Use the whole bottle. Cut your beans in half. Then split length wide. Cover the beans in vodka wide mouth jar. If you use a metal lid use a piece of wax paper, place it over jar and place the canning lid next and screw it on. Wax paper will prevent any rusting and it will prevent any possible leakage from jar while its aging. I found my jars leaked when shook without wax paper. Plastic lids can be used a well. Follow Mrs. H shaking schedule and beans count.

I have been giving madagascar vanilla as gifts. I use grade a beans and quality vodka and wait at least 6 months (preferably a year) before using. 1oz beans per cup alcohol. So good.

I did vanilla, lemon, orange, coffee, almond (I crushed mine), and mint early last year and was part of gifts to all the bakers in my family. They all have asked if that will be in their basket this year 🤣🤣🤣🤣. Nope this year all organic soups and body care I made with herbs and dried flowers from my garden.

We've made this and let me tell you - She speaks the truth!! Once you do this, you will never go back! Now regular vanilla tastes flavorless and almost acidic. We did coffee and lemon. Simply beautiful!

Thank you Mrs H. I have some vanilla extract brewing - so to speak. Just a quick note on the labels that wear like they all seem to do here's a quick suggestion: Use a sharpie marker. You can use alcohol to remove it from the glass so you can re-label you jars. I'm not sure about plastic lids but you can use it on the metal flats as well. If you think a jar will be handled a lot also mark it on the bottom inside the indention ring. Thank you for sharing your life, talents, and education with all of us. 💖🌟

Wow ! This was a very good casting and tutorial for vanilla extract for coffee and all associated food usage in this ingredient !!! I personally been following your program and prepping growing and the likes of D I Y . I have a question are you taken and or available for marriage ? Lol ! I’m teasing MRS . Homestead ! To Mr . Homestead I’m saying this with love and respect Mr.Homestead ! Your a fortunate young man ! And just the opposite Mrs . Homestead is a fortunate young lady ! My husband dislikes coffee. When I would make any thing with coffee added, he always detected it. I gave up trying to make things with that addition. I do make pumpernickel bread which adds instant coffee. He never detected that. I like to make my vanilla in rum. If you have to add rum to a recipe, it is on hand. Also I made anise with star anise when I lived in FL. Found the individual star anise at bulk food store. Also I put ginger in vodka and that turned out great. Would like a demonstration on how to make a maple flavored syrup for pancakes.

Lol, I was lookin'. I made 2 bottles. 1 with spiced rum and 1 with vodka. And Madagascar vanilla beans. $$$$$$ but worth it. 1/2 gal. Of each been sitting 1 1/2 years Ms. Heart. Now to bottle, label, for gifts. Can't wait to try it myself.

Have you tried dehydrating you eggs in your Excalibur? Powered eggs are wonderful for fresh scrambled eggs and used in cooking recipes. I bought some trays for my Excalibur to pour the scrambled eggs into then after drying put them in my food processor to make the power. Then sealed up the jars with an oxygen absorber and they are great.

I really enjoy vanilla extract infused top shelf rum or bourbon to give more bolder flavor. When using extract in baking the alcohol evaporates and leaves the flavoring. In addition I do peppermint, orange, lemon extracts.

I made some this way. It is the best! We don't use alcohol in our house,so the glycerin is great!

Re Alcohol vs Glycerin: Both get the job done but alcohol will extract more, work faster, and last indefinitely. Alcohol extract/tinctures will be ready in 3 months and very potent at 6 months. If you don't want to buy a half gallon of alcohol, just make a quart jar. Get the cheapest vodka or rum; it will bake/cook off. After 3-4 batches add more vanilla if you notice that the flavor is weakening, but you can basically have an unending supply. Glycerites start losing potency (especially medicinal ones vs just for flavor) and aren't recommended to be used beyond 2y (but I'm sure you will have used it before then 😉). HTH 🌺

I love this update thank you so much Mrs H. You always do such a good job when you're presenting stuff like this and giving us alternatives to things that some people might be objective to like the alcohol. I know some people who use the non-alcohol version from the grocery store because the fact they have such a past with alcohol and they don't want the temptation. Patara from Appalachia Homestead; is asking for other Homestead KZbin sites to contact her about a homestead challenge. I know you and Mr H would love to do it.

Are you considering growing some vanilla beans? You can do it as a house plant. How about learning how to make your own glycerin to be a sustainable source? I use alcohol, so that's sustainable for me, but I do like the thicker consistency idea. You always get my mind thinking of different possibilities! Thank you for all you do!

Vanilla bean only grows in certain climate. Hawaii, India, Madagascar, Mexico just to name a few.

I made 10 each pint and a half vanilla extract using alcohol. I made them just over 2 years ago. I never realized how expensive it is to buy at the grocery store. I have enough to last my life time.

You can also soak them in vinegar or an oil. The vinegar you would use for cleaning stuff around your home. The oil you would use as a furniture polish; and orange oil is really the best for wood furniture. (I learned this from an antique dealer)
