Just a suggestion: I wouldn't worry too much about a changing table. It's much easier to just use the floor or a bed. Get a simple changing mat to lay down and you can do it anywhere. I think changing tables often end up not getting used much.

Congratulations! A very lucky child to have you two wonderful people as parents. And your work on your property and house is out of this world. You guys are so talented --- so many skills. You could hold lessons -- like on-site training for other people who have no clue where to start, what tools are needed, how to use them (especially things like sprayers, putting up walls, tractor, concrete). It's a real need in today's world, where most people aren't automatically trained by family.
