I always use chicken broth instead of water or milk, makes more flavorful. I don’t over mix mine because it makes them tough.enjoyed a different take on making them.

I am 74 years old. Many times I watched my Grand Mother make Egg Noodles, recipe. Difference, to cut them she would roll out square to thickness, flour well, and roll then cut to width. As kids my Sister and I would get to unroll them and place them on clean towels hung over chairs and laid on tables.

I know this is an older video but I wanted to thank you for posting. My Grandma’s brother-in-law used to make these for holidays when I was growing up. They were delicious with Turkey gravy and were one of my favorite Thanksgiving foods.

My father-in-law use to roll his noodles on a newspaper, I guess it kept enough flour that they didn’t stick. I flip my noodles over every so often while I roll so I can add flour when needed. And usually don’t have a problem with them sticking. Years ago when I first started making homemade noodle i didn’t know how t figure out portion sizes. We needed a large amount for about 10 people and no one there knew how May eggs fo that many so I think we used a dozen eggs at least and I tend to make my noodles on the stiff side so they swell quite a bit. We ended up with two canning pots full of noodles. We could have fed the whole town. I haven’t made any lately so guess I need to go pull out the eggs and flour and make me some, I love homemade noodles. TFS

Yes, your video did help me out a lot. My grandma taught me how to make these in the 60's but we used ours immediately so I had no idea about the storage. I also like your method of cutting in sections and stacking. My grandma left them flat so it was hard for me to cut them evenly. Thanks so much.

My italian grandmother made home made oasta, she used the rule of thumb of one egg for every 100 grams of flour. She mixed it by hand and used the pasta machine. They were the best i the world. Thank you for teaching those who don’t know how they are made, so they can enjoy the best noodles in the world!!!❤️🌷

Loved this video. I do it a little different by rolling it in a tube and cutting, which was so much fun as a child. I really need to have more patience to let them dry a little longer than I do. I make either chicken and noodles or beef. With each I add a little carrot for color and added taste.

Does anyone know how to make noodles taste like chicken and dumplings without chicken and using the egg noodles? Since my Mom passed away or Holiday's on Thanksgiving giving and Christmas hasn't been the same. She'd have them in pizza boxes with flower and newspapers on the bottom of the boxes and i remember them setting for a while.

Thank for sharing. .. my Grandmother & my Mother made these now I also do . just not as much as I should 🤣 my Mother’s side is from South Bend Indiana and we have always added the other egg then proceeded to cook them in chicken broth with the deboned chicken then added a few pinch’s of chicken bouillon and that was dinner that night . I really like the idea of milk ! if I was low on eggs this will definitely work or could try just for fun. Also like the idea of drying them out.. Thank you for the recipe. Made chicken noodle soup today. Didn't let them dry out as long. Tasted similar to chicken and dumplings. Next time I will let them dry out more and roll out thinner.

@@HomesteadingWays Im curious what keeps from going bad due to raw eggs and milk in the recipie and leaving them sitting out and or storing them. ive mafe ahead of time but i used a cookie sheet flowered down spread them out covered them and put them in the freezer say over night or just a few days before cooking them.Could you please tell me how you store them.?I want to thank you for doing the video i very much enjoyed you challenged me with your knoledge to want to learn some thing new.

We used that brand too, but it doesn't come NEAR our great grandmother's noodles. I made noodles yesterday and can't wait to try them with chicken and gravy and mashed potatoes. :)

I make this recipe and use a pasta roller machine to roll out the dough. I will make strips of rolled dough, well dusted and stacked on top of each other then use a knife to cut width wise and make the noodle. I'll boil the noodles for about 3 minutes (until they float) then remove them to a drying towel. Once dry I put the noodles in a large bowl and keep them in the fridge. I'll make the soup and to serve, one can take a hand grab of noodle then add the soup.

Thanks for a great recipe video. The amount of liquid needed usually depends on the humidity. You never know until you get in there and work with dough.

Drying them on the newspaper would serve two purposes...reduce the clean up and help absorb some of the moisture.

what keeps them from going bad with raw eggs if you leave them setting out or leaving setting out for storing them id be afraid of food porsening from the raw egge.

My grandfather makes the same type of noodles except when he rolls them out he rolls them on wax paper and lets them dry for a day then Cuts them for some reason they taste different than the regular way you make noodles I'm not sure if it's because the way they are aged what are your thoughts on this

Thank for posting! What I loved about this video, you kept talking while the dough was either too crumbly or too sticky. When I first started making noodles, this was always my problem, and I always bought Oakland noodles LOL you really do have to get in there and mess around with it for a while.
