I'm the southern United States we use ground homony corn to make grits. It comes pre ground and it cooks kinda like creamy wheat. Made savory or sweet, often with buttery shrimp or cheese. We also dry roast and season them for a crunchy salty snack. Also a popular and super yummy tripe soup called menudo that comes from Mexico i think.

For thickening it is always best to use more corn it will release it's starch instead of corn starch and flour but i like your videos
