Recipe: Honey Balsamic Roasted Carrots
Ingredients:
Multi-colored carrots (white, purple, yellow, orange)
Olive oil
Salt
Pepper
2-3 tablespoons honey
2-3 tablespoons balsamic vinegar
Instructions:
Preheat the oven to 400°F (200°C).
Wash and cut the multi-colored carrots on the bias, ensuring pieces are relatively uniform in size.
Place the carrots on a foil-lined baking sheet.
Drizzle olive oil over the carrots and season with salt and pepper. Toss to coat evenly.
Roast in the preheated oven for approximately 17 minutes or until the carrots are slightly tender.
In a small bowl, mix honey and balsamic vinegar to create the dressing.
After the initial roasting, drizzle the honey-balsamic dressing over the carrots and toss lightly.
Return the carrots to the oven for an additional 5 minutes or until they achieve the desired tenderness.
Remove from the oven, and serve these delicious Honey Balsamic Roasted Carrots.
