I'm very impressed Rachel.. First time viewer, and I just subscribed.. I grew up in the 60's, 70's, my parents still doing the Victory garden habit they grew up with during the Depression, and WW II.. a tradition I have passed on to our children.. and I've always loved carrots.. But the recipes I grew up with were simpler, only margarine and brown sugar.. I have to say yours looks much better, much more interesting.. The additional flavors.. I never thought to add garlic and those herbs, but I definitely will the next time we have carrots.. I'm 63,.. but you know the old saying, Never too old to learn something new... LOL... and oh.. I did discover the joys of using real butter.. so many folks my age grew up on margarine.. because it was cheaper in hard times.. Never had real butter until I enlisted.. While I do use a peeler now a days, just because it's easier.. But when I was 6 years old my Mom had an interest in teaching me how to cook.. and I learned to use the edge of a paring knife to scrape off the carrot skin. Not peel.. but drag the edge at 90 degrees and just scrap it off... not quite so easy as a peeler.. but Mom made sure I learned how to use kitchen knives carefully.. and with some skill.. Always be grateful for that.. I have ever since tried to learn as much as I can.. new recipes, new techniques.. Have to show this to my wife and daughter.. So thank you for teaching me this new way to cook an old favorite.. God Bless you Rachel..🙂

Excellent recipe. Using my carrots freezing and dehydrating etc as I still have tons to pull, and thought this would go amazingly w/a sweet and tangy chuck roast I had in the slow cooker. My family ate every bite and wants them with the Sunday roast this week and to take for our veg contribution to Thanksgiving Dinner ABSOLUTELY DELICIOUS My wonderful Mother in law is going to flip. Fantastic flavor. Thank You!

When I first watched the video and your combination of your (pre-recipe) before they touch the carrots. (preparation is everything) That's what caught my eye when it all starts in the little pot with the butter and everything else !! I can't wait to start making your recipe, first I have to go into the produce section and find some beautiful healthy carrots. The only little adjustment I need to make is the amount. With my appetite and my family 2 lb isn't really enough .., Rachel thank you once again...

I love the idea of saving the peelings along with celery and onion scraps to put into soup - brilliant idea, reuse, recycle. I also use peelings in my compost garden and finally anytime I boil anything (without salt) I save the water and use the water to water my plants - they love the nutrients. Love your channel.
