I did this last Christmas, my Mother in Law (who used to run a café) said it was the best ham she's ever had. I'm doing it again this Christmas. But I think my ham.might have been a bit bigger as it was a 15 beer cook! But so worth nothing getting to bed until 4am on Christmas Day! Keep up the excellent work mate.

yeah mate you had me at "this is an 8 beer cook". Love the little tricks you casually drop in as a reminder, move the ham around from the heat source and place breathers on top of the ham. Such a simple trick to keep in mind that can easily be forgetten when starting out

Glaze Ingredients: • 1 cup of orange juice • ½ cup of orange marmalade • 1/3 cup of maple syrup • 2 tbsp of Dijon mustard • 1 tbsp of dried rosemary • ½ tsp ground cinnamon • ½ tsp of nutmeg • ¼ cup brown sugar • ¼ cup of Fireball whiskey

Love your videos ive got chargriller without the firebox would i still set up the charcoal in snake method in it. I usually just put in full chimney either side of what im cooking.Might be a stupid question.

Not a stupid question mate, ham is cured, wich means it has been brined and most times smoked. So it is ready to eat before you touch it, glazing and smoking it again just adds to the flavour @fitz6419

Thanks @jacksonevans7704, depends on the lit fuel you start with , vent set up, weather and the fuel set up mate. I do have a video on the snake method but a 2 to 1 snake (two rows on the bottom and one on top) and start with 14 fully ashed over briquettes should get your Weber to 150c easily mate. If you are using a water pan, don't use cold water as it will absorb a lot of the heat, use hot water from a kettle. 🍻

New to this so need some advice please. I want to smoke and glaze a ham for Xmas lunch the day before so we will be eating it cold. Do I still need to get it up to an internal temp if 70 degrees or can I just let it smoke for a few hours to impart the Hickory flavour? Cheers

For the glazing part yes, heat it up as per instructions and then you can let it cool down and place back in the fridge and consume cold like and regular ham Allan Power 🍻

If you take any meat out of the fridge for hours, yes it can and will most likely develop bacteria. Hence why we have food safe temps, not my rule and not a magical number, it is called science Louis Williams 🍻

The hock is the only part that has skin all the way around, I do remove all skin, apart from the small amount left on the hock.. The underneath of the ham although it is a dark colour, it is not skin. Angela Saddler 🍻

So you’re using a Webber with charcoal inside . You can literally pass out from the carbon monoxide . My Advice is to do this outside, or in the garage with the door open

I'm filming in a purpose built set I constructed in my backyard mate, the side walls where my camera guy stands most of the time is fully open, with 3 large fans in there as well. @luckyphilster food handling laws in Australia disagree with your "opinion", If you are reheating potentially hazardous food to hot hold, you must heat it quickly to 60°C or hotter - ideally in two hours or less.
