煮臘腸煲仔飯,個人喜好將臘腸一開二或三,臘腸油香會從切口滲入米飯内增加風味😊

⬇️⬇️English recipe follows ⬇️⬇️ 排骨臘腸煲仔飯: 材料: 排骨4兩 臘腸2條 蒜蓉1茶匙 豆豉10粒 辣椒仔2隻 芫荽1棵 米2膠嘜 處理: 1. 排骨,沖洗乾淨,擎乾水。 2. 臘腸,滾水浸一浸。 3. 在煲仔內加入200毫升水,先煲滾水,然後放米。 4. 排骨調味: a. 生粉1/2茶匙 b. 糖1/2茶匙 c. 生抽1茶匙 d. 鮑魚汁1茶匙 攪勻,加入蒜蓉及豆豉撈勻,醃10分鐘。 5. 米,洗乾淨。 烹調: 1. 煲仔內的水已煲滾,放米落煲,繼續大火煮,等再滾起。 2. 滾起後,放1隻筷子落煲,有半吋水位就可以了。 3. 放臘腸及排骨,用中慢火煮。 4. 當飯面沒有水分就熄火,焗10分鐘。 5. 過了10分鐘,開最慢火,分四面,每面烘2分鐘,讓4面受熱。 6. 放上芫荽及辣椒粒,完成。 Pork ribs claypot rice with Chinese sausages: Ingredients: Pork ribs 4 taels Chinese sausages 2 Nos. Garlics sauce 1 tsp Preserved beans 10 Nos. Red chili 2 Nos. Coriander 1 No. Plain rice 2 measure cups Preparation: 1. Pork ribs, rinse thoroughly and hang dry. 2. Chinese sausages, soak in boiled~up water for 1 minute. 3. Heat up 200ml water at medium flame in pot, then put rice in it. 4. Season the pork ribs: a. Tapioca starch 1/2 tsp b. Sugar 1/2 tsp c. Light soya sauce 1 tsp d. Abalone sauce 1 tsp Mix well with garlics sauce and preserved beans. Season for 10 minutes. 5. Rinse the plain rice. Steps: 1. Water in claypot has been boiled up. Put rice. Heat up at high flame and wait for boiling up again. 2. Put a chopstick in claypot, it is OK when you see there is 1/2" water above the plain rice. 3. Put Chinese sausages and pork ribs. Cook at medium~low flame. 4. Turn off fire if you see there is no water on the rice. Leave for 10 minutes. 5. Turn on low flame after 10 minites. Heat the claypot for 4 areas. Each area is to be heated for 2 minutes. 6. Put coriander and chili cubes on top. Serve.
