I’m a KCBS Certified Judge and I do my ribs exactly how you do yours Except I brine my ribs lightly and my ingredients are are different when I wrap them. I use agave syrup instead of honey. And I paint the back with BBQ sauce.

I cook my ribs at 275 - 300 the entire cook. I entered 3 competitions in 2018 and did really well in 2. Lets just say I took home $1500.00 at one of them. 😁

I cater BBQ for individuals , and families. I can testify that I get ribs done in 5 hours. From start to rest There is no need to cook ribs 6 or 7 hours.

@@SmokinJoesPitBBQ yes. At 3 n a half hours at 275. Baby backs are the preferred my customers want. At 3.5 hours I sauce/add moisture/honey/brown sugar/wrap for naked in foil. Throw them in my stove at 300° for an hour. Unwrap, resauce, and into the delivery pans they go. Vertical offset 260 to 300 ° at times. Stick burner home build.

It's really good! If you smoke at 225 you get a really good smoke flavor. You will at higher temperatures as well but 225 is the magic temp for good smoke. 👍🏼

How do you keep the sugar from burning? I cook on an offset smoker and my ribs always seem to get a little too dark. Normally cook 2-3 hours unwrapped and then 1 hour wrapped

I love my offset smoker and just picked up my first Yoder. The offset does not have a heat defused plate like the Yoder, so what I like to do on the offset is put the ribs as far away from the flame as possible, put a water tray closest to the flame and sometimes I hook a piece of foil in front of my ribs to protect the ribs from the flame. I use a lot of brown sugar in my run and that seems to help me a lot. I also spray the ribs every 45 min or hour. Hope this helps. I usually run my offset 250-275.

Hey Andre, the Yoder cooks really even. I use the top shelf for any cooks over 250 degrees. I use the bottom shelf for pork butts or even a brisket when I cook at 226 or 250. Good luck with your smoker, you're going to love it. Vacuum up the ashes before every use. 👍🏼
