Hard times tip: Don't throw the wrapper from the stick of butter away. Put them in your freezer and use them when you need to grease a pan.

My husband's boss grew up eating "bread soup" and still eats it for nostalgia. Butter a piece of bread, sprinkle sugar and put it in a bowl and pour milk over it. 🤷‍♀️

And how do you know that her grandmother didn't tweak the recipe at all? Even a gram or so difference of any ingredient and bam, original recipe for Granny. Even if she changed nothing and that was the recipe she used it's now her recipe of choice a.k.a. Granny's recipe for pie. Don't be such a pedantic wanker.

In the UK we just call this an egg custard tart. The only difference is that we sprinkle nutmeg on top before baking.

A great way to get room temp butter quicker is to place it about a foot away from a heater. If it's too close it will melt so be careful.

Another odd pie from the Depression era is a Pinto Bean pie that tastes like pecan pie. There are a lot of versions, but basically put you make a flour crust, then the filing a can of pinto beans (or about 1/2 cups cooked pinto beans, a cup of brown sugar, 1/2 a stick of butter, 2-3 eggs, a few pinches each of Cinnamon, Nutmeg and Clove and a dash of vanilla, put the mixture into an unbaked pie and bake at 350 degrees for an hour.

I always wonder why there aren't more Western dessert recipes with beans, when East Asian red bean sweets are so delicious! Seems like they do exist, they just aren't so popular anymore.

@@evlfck, most people who could afford to make a pie lived on a farm and they had chickens and cows so there was a supply of butter and eggs........my grandparents lived through the depression and they ate well because they did live on a farm and had animals for food and a garden for vegetables. On the occasion when they wanted a pie the only things that were missing were the sugar and flour. My grandparents used cane syrup for sweetening because they grew cane on the farm and used it to make syrup. This was actually one of the ways they made a few extra dollars. They made cane syrup which they sold for 25 cents per 1/2 gallon.....so there were ways to eat well even though there was not a lot of money.

I make this all the time. I add cinnamon, cardamom, garam masala, allspice, cloves and ginger to it though. It also doesn't hurt if you replace the water with milk. I usually replace half a cup with milk just for a creamier pie. It's not bad at all with just water though, I've made it like that several times. Thanks for the vid Emmy.

This is so weird! I live in a tropical country, so having access to butter and eggs but not fruits is really strange. It's really interesting how foods in scarcity are so different in different places. At times when my money management and income were really inconsistent and I had not a dime, I could rarely afford eggs and even less butter, but I could usually afford fruits and sugar and some flour. I would put a fruit in the oven with some sugar on top (bananas, apples, oranges, plantains, pineapple, whatever). I would also make some of the most basic crepes ever, which are actually not too bad: You take an empty bottle, add equal amounts of flour and water, add some sugar or salt or whatever you have on hand, maybe cinnamon, shake the bottle and make the crepes on a hot pan with a little bit of oil or pam or butter or anything. Then, I placed the baked fruit in the crepe, and there's dessert.

I think they used lard or tallow in pie crust back then. That’s how my grandmother made it. It made it tender and flaky. Butter has always been an expensive ingredient. These foods in the US are now subsidized by the government while fruits and vegetables usually are not.

@@jessicah3450 also back when this pie was eaten per made food was not much of a thing like it is today (that really happened after WW2) and many people still lived on farms. So ingredients like eggs or butter, at least a bit or used once in a while for a treat, would be less expensive

My great-grandmother used to make whipped cream pie during the Great Depression. She would bake a pie crust then mix heavy cream, vanilla extract, and sugar into a heavy cream. After she was done she would put the filling in the crust and serve it. My grandmother still makes it every Christmas for my grandfather. It’s one of my favorites ☺️

My Mamar (Maternal Grandmother) used to make "Rabbit Pie" her mother used to make it during WWII, It was a recipe the family loved. I'll ask around the family to see whether anyone still has her cookbooks. Mamar had Notebooks Full of her family handed down recipes. These books were promised to me, but I never saw them again after she passed away. Despite its name, this pie contained no rabbit, or meat. It was made using vegetable peelings. Just about every peel except onion could be used, but those were boiled to make a dye/stain. It could be used for fabric and clothing, or it could be used to dye hair or it was used as a "tan" that made it look like they were wearing stockings. The main veg and most popular were potato an carrot (hence the rabbit) peels. My family were very lucky, we had a homestead/farm. So we had our own fruit trees and grandad could grow anything. He was so beyond a green thumb, he was green through n through. We we always had plenty fruits & veggies, we had chickens so we always had eggs and from time to time we would have one "for the pot" or we actually would eat the wild rabbits grandad had caught trying to eat our veggies. Later I remember us even having a couple of goats, pigs, cows and 4 sheep, we even had our own bees. So every year during the days of rationing my grandmother made jam using the berries that were abundant on our land... My grandparents gave them every year as Christmas gifts. I really hope one of my aunt's has her books. If we locate them, I'll send you some of the recipes to try. These will all be English Recipes. Grandad would harvest everything when ready, and Mamar preserved what she could. If she couldn't we kept what we could eat, the rest grandad went around the village with. Many years later, he was in his 80s and I'd come home from work to find a bag hooked over my door handle, it would be a bag full of fruit n veg. I missed that so much when he passed.

Milk goes bad very quickly, so milk itself usually wasn't rationed out. But butter and cheese last way longer, and as such most milk was turned into products with longer shelf lives (and actually a higher callory count because of all the fats) and then rationed out to the hungry masses. This meant they had butter and cheese, but no milk. Recipes that required milk or cream (custard, for example) had to be adapted like this to work.

This reminds me of my granny and her chess pie. During the depression, they would make chess pie as a treat and she passed her original recipe on to me. Now that she's passed, having a slice of her classic chess pie always makes it feel like she's close.

I've seen some people wondering how this could be considered a hard times recipe with so much butter, especially since the milk is replaced with mostly water and butter instead. Before WWII, milk was seen mostly as an ingredient and a meal, not necessarily a beverage to be had with a meal because the dairy industry exploded for ration production and all the American milk advertisements are still going because of it, not because milk is healthy because it really isn't healthy as a regular beverage. A rural family probably would've replaced a lot of what they couldn't eat with milk in order to get more calories and nutrition and would still make butter from the cream. Mixing butter and water can create a sort of milk substitute that has enough fat to create a pleasant taste without having to sacrifice the nutritional value of the milk itself. Essentially, the recipe was created to stretch the usage of one ingredient as much as possible for special occasions without having to lose its value as food.

Milk would have also gone bad way before butter would so it would make sense for them to do it that way instead since they could stretch it out for a longer period of time. I actually add a bit of butter and coconut oil to my coffee because it makes it so much richer and adds to the density slightly. Added bonus is that it fills you up as well.

Thanks for the explanation, in my country we have a dessert like this that uses cheese and sour cream, that can be expensive but it was made to extend the life of this products, since it was used when it was about to go bad. We kind of reuse cheese, since we don't have Europe's cheese culture and they don't last that long. It gives a sour taste and is delicious

Emmy, try taking a drinking glass and pour almost boiling water inside. Wait about 30 seconds and pour the water out. Put the stick of butter inside and invert it on the counter. The warm glass will create an environment to soften the butter in no time!

that is what I was thinking, something like a sweet egg custard... doesn't seem like it was overly "cheap" to the point where you couldn't add something else for filling, similar to how the ritz crackers would probably be about as expensive as just getting apples.

I guess it all depends on what resources you had access to. Given that the person who made the recipe readily used eggs and butter, I wouldn't be surprised if they had a farm still, or at least a few animals. It could also be a recipe more from the beginning of the Depression rather than towards the middle or end of it, when it would be much harder to acquire those ingredients. In fact, due to the necessitating of butter without any milk (like she would if she had a dairy cow), I'm inclined to say she probably used margarine in the original recipe. My nana used to tell memories of them getting rations of margarine or lard, and they were given a little orange tablet to crumble into it to give it more of a yellowy color like butter might have. Could have easily had a few chickens for the eggs, though (and this was probably saved for a special occasion).

There's so much beauty in simplicity. It just goes to show that you don't have to throw the kitchen sink into everything and that some recipes taste better with a more rustic flair. Awesome recipe. Thank you for sharing it. If you don't have a food processor like me, I like to grate the cold butter on a cheese grater(The larger holes), and then use forks to finish the process. It takes less time to break down in the flour, and it gets a really good pebbly texture. I do biscuits and pie crust that way.

To soften you butter you can also take a mug and fill it with water , microwave it until the water is boiling , place your cold butter standing up vertically, throw the boiling water out of the mug, flip the mug onto the butter so it covers it and let stand there and it should be softened in no time

@emmymadeinjapan - Nice easy recipe. A couple of tips from an older cook: The cooks of that era didn't spell out all the steps that are required but they left us clues as to what to do. When they call for the ingredients to be "creamed" that implies, as you wisely realized, softened butter. However it also implies an order. If the recipe was hand written by them or on an original card it should be done in the order the ingredients are listed. If the recipe was transferred by a third party or you are not sure then use the general rule of thumb - soften the butter first, then mix in the sugar to evenly distribute, then mix in the eggs (that's when it gets creamy), then lastly add whatever liquid or other ingredients are used. Otherwise, as you found out, the butter doesn't mix in well 8:32 and takes forever to get the butter lumps small. Luckily the recipe called for boiling water and melted the butter so the mix was nice and smooth for the pour. If this had been a standard custard recipe with just room temp milk you may have had to get the emulsion blender out to fix the butter lumps for a smooth custard. Your crust will do better if you brush it with an egg wash and then allow to chill. It will help seal the bottom to stay flaky and won't allow it to soak up the filling. You said you like bigger flutes in your crust but smaller flutes will tend not to collapse so easily. I think the watery filling was too much for the big uncooked flutes to stay unsupported during the baking. You can fix that with the pre-bake as you suggested but the whole point of the pie is quick, easy, and delicious.

@@dongarza4289 There's one about 40 minutes away from us, but we're rarely near it during business hours. They're sold out and close by about 1 or 2 in the afternoon. In south Texas, there were so many you could pick your favorite. 😕

@@dongarza4289 i live in mexico and i can barely find a panaderia! they're all either cafes or pastelerias, i only just saw one the other day and i have no idea if its good or not, it's times like these where i wish i lived in a bigger city

You should try thyme soup, a recipe from Catalonia, Spain. It's very cheap and delicious! Search for "sopa de tomillo" or "sopa de farigola". Salut. Take care, BYEE!

My family lives in rural Montana. This was a staple then because cream from a local creamery was cheap. And butter was almost considered a waste product so relatively inexpensive. Sugar cane then was a staple crop and relatively easy to come by. Especially if a bag got wet and couldn't be sold at market.

My mother used to make Vinegar pie...and so did I years ago...they are pretty good. I also make Vinegar and honey tea from time to time, either hot or iced. It's good for when you're bored. LOL!!!

You can make alcohol out of almost any kitchen scrap. If you can make alcohol, then you can make vinegar. All you need is bacteria. White distilled vinegar is made from ethanol. Ethanol is made from whatever is cheapest to make it out of from corn to sugar beats to potatoes to petroleum (outside of western countries). Vinegar is very versatile. It can sanitize and clean, get rust off of metal, preserve food through pickling, make cheese, and kill weeds.
