Dumpling soup is big here in Pennsylvania (chicken and dumplings, chicken corn soup with rivels, etc). My mum makes a spinach soup that is everyone in the family's favourite. It's actually more a spinach stew - ridiculous amounts of frozen spinach, the sauce is tomatoes and a blend of herbs, lemon juice, and then she adds these delicious dumplings that she makes with vegetable suet (always has been an accidentally vegan meal). If you guys can get vegetable suet where you are, I'd highly recommend it for dumplings. They are fluffy, dense and with a bit of chew.

Oh! I make a stuffed cabbage recipe! Not sure if it's close to the Jewish version as mine is the polish golabki (sp?) you prepare it like all other cabbage rolls but my filling is rice, black beans, the morning star ground crumbles, paprika, cumin, pepper, salt and then of course you fill the pan with a couple cans of tomatoes. Soooo good. And you freeze them and eat for a month lol. Also, hhf is such an inspiration to just trying to make things vegan lol

Glad to hear you are taking a break! Well deserved! You both seem to work very hard and should absolutely take the time to recharge. Lauren, congrats on finishing your book. For someone who was unsure about doing it you certainly got it done! You must be pleased as well as relieved that it is complete. Not sure whether another comment covered this but I have reason to believe John is right aboot dumplings being from an impoverished place. My grandmother and mother made chicken and dumplings all the time. My grandmother was of polish origin, with her parents having been first generation Americans. I have been contemplating making a vegan version for a few weeks but had not yet sat down to sort out the changes when I saw this video. Than-q for doing the work for me, as you so often do!My beloved continues to ask for chicken noodle soup on a weekly basis! Being disabled and having difficulty prepping and cooking much of the time I feel totally confident in using your ideas as I know I will always have incredible results. I thank you as do my hands, arm, neck and back!Take all the time you need to restore and refresh, as if you needed anyone's permission to do so!Take gentle loving care of yourself and each other! Pretty much every vegan channel does 10,000 different curries. It feels like whenever you need a recipe for a channel, you make a curry, not to mention that is the main thing vegans eat when they go out and they don't want salad.

I am from Hungary, form the middle of Europe. We do have dumpling soup, just with a slight change of veggies. We wouldn't add celery, it's not really native or produced here, just like kale. Instead we'd surely put in the root of parsley, that's a typical ingredient in soups around here. Also, instead of adding ready broth, we'd cook the veggies starting from cold water for about an hour. You can also add some semolina to the dumplings, it gives them a nice texture! :)

Love you guys. Thank you so very much for sharing so many ideas and recipes! It has been extremely hard going vegan from a carnivorous junk food eating beast and while I did it well for a few months I started burning out on the same things over and over again. It's people and channels like yours who have opened up a whole new door and breathed life back into my resolve to see veganism until my last. I am so thankful. Thank you thank you thank you so very much!
