I went to work in Barcelona and one of the developers was a Spanish guy from Galacia in north east Spain. He would always buy a massive leg of Iberian ham. We went with him one year and the owner of the shop took us down into the cure room, gave us tasters with bread and cheese, wine to go with it, advice on storage, when best to eat, etc. It was an excellent experience and they took such pride and were willing to share with us their history, how they make it, etc. We went back the next year and he remembered us and went through his latest hams he had, plus ham, wine, etc. I love people like this who are so knowledgeable and passionate about their trade. Shame not all industries, etc take this attitude.

An ex of mine and I went to a Robbie Burns dinner, and tried haggis for the first time. We thought it wasn't near as bad as some people make it out to be. It was fine and we both went back for seconds. Neither one of us have any Scottish in us. He had bought the tickets form a friend at work, and we had a great time!

In Hawaiian religion, there are lesser deities known as ʻaumakua. They are usually animals like the sea turtle, the dolphin, the owl or the octopus, though they can also be flowers, trees or even a hill or a cave, that are ancestral deities. My family ʻaumakua is the SHARK, so when I heard of Iceland's history of eating shark meat, I was ready to be upset, much like how I feel about Asia's torture of the animal in making shark fin soup. This is an amazing process, though! I'm impressed that the bulk of the sharks come from by-catch, that they use SO MUCH of the shark in this process, and even that historically it was buried in the ground to allow it to ferment and detox (Hawaiians loved to bury their food haha). Really a cool segment, and very enlightening! Aloha Iceland! 🤙🏽🌺

Iberian ham is the best cured meat I've ever had. And I LOVE cured meats. They do it right out there. They are not joking, when we got our whole leg, holding it makes the fats melt just from the heat of your hands.

Its so sad that there seems to be so much predjudice against offal and it has vecome difficult to buy anything but muscle meat. We are missing out on so much. Here in UK, steak and kidney pie and pudding are 'iconic' British dishes, yet i can no longer buy the ingredients in any of my local supermarkets. Steak, yes. Kidney, forget it!

I'll pass on the lungs and the ammonia shark in the other video tho,,,lol ,, I had the worst capicola this week, I need to get the good stuff like my mom used to get. In my opinion the best Black Pudding is Stornoway Black Pudding which is only sourced from Stornoway in the Isle of Lewis, it tastes far better than the English one and has a more Haggis like texture to it.

There is no "English one" In England black pudding varies more than it does in Scotland. I love Stornoway black pudding too, you don't have to go to Lewis to buy it, it is sold everywhere in Scotland. Stornoway black pudding is different because they put beef suit into it.

I'm Scottish and Haggis is like a you love it or you hate it scenario, honestly it tastes really good and it has a slight spicy note from the herbs and spices in it, once you have had a mouthful, you really get hooked on it!
