Uzbekistan is home to an iconic disk-shaped bread known locally as Samarkand bread. Named after the city of Samarkand, this bread is enjoyed year-round and typically eaten at the start of every meal.
Unlike most mass-produced loaves, these breads are still shaped by hand and baked inside tandoor ovens.
We visited a traditional bakery on the outskirts of Samarkand to see how 15,000 of these unique loaves are made every day and what it takes to bake such big batches.

As a Uzbek , I can say that this type of bread is really famous in our country , and I'm grateful for you guys that you made this video , it's really hard to express emotions while you guys made a full video about our country's symbol!!!

@@thingswhatilike I remember before I immigrated to canada, my grandmother would cook fry some tomatoes, onions and hot peppers, and add some water, and we used to eat with fresh bread, our neighbours used to give us, I would always wake up to the smell of fresh non. (Naan in Uzbek is Non)

As a person who have been in this kind of "bakery" I can confirm that it smells heavenly there. I also eat this type of bread on a daily basis and it's an understatement to say that it tastes at least 10x better than a regular white bread. I'm convinced that every person should try this bread before they die, ESPECIALLY when it's fresh! Of course it tastes good in any moment of it's short-lived life, but when this bread is fresh it's literally the finest thing in life.

@@escapedcops08 I know all bread smells good when it's fresh, but tandoor in which this particular type of bread is being baked in makes it smell even better edit: and as a person who's been there I felt the need to prove some rude people that were saying that it's probably smells like sweat and "athletes foot" there that they're wrong

I wonder how you learn this, since all parts of this process are so delicate. Like you mess up the throw you loose the bread, you mess up placing it in the oven you loose the bread and probably burn yourself...

@@Trekki200 I'd guess all the loaves weighing more or less the same probably helps a lot to learn how to properly throw them, and i assume they've accounted for losing a couple loafs in the process especially if there's a new set of hands in the bakery. These are the kind of things someone probably randomly picked up over time to make their job easier and when it turns out to work decently it's passed down to others until it becomes standard practice. Just a theory based on my work experience though, that's usually how tricks of the trade come into existence and they take practice. It helps that you're exposing yourself to at least 8 hours of practice a day if it's your job haha.

Lived with two Uzbekis during one semester in college. Both had hearts of gold, absolutely amazing people in every way! It is easy to see how they were both such well-developed people coming from a country with such a respect for talent and skill! Especially sticking the bread onto the tandoor walls was amazing to watch!

I had the privilege of visiting Uzbekistan for holidays a few years ago. Wonderful culture, many friendly and hospitable people. I still remember how impressive the Registan was in Samarkand! Much love from Europe :-)

Registan is BEAUTIFUL! Amazing architecture and so much history! Loved it. My favorite place was Charvak region near Tashkent. Beautiful nature and pristine emerald blue water in the Charvak Reservoir and tributaries

@@mpforeverunlimited Yes they do. Both Uzbek and Russian. Russian is the lingua franca still in former Soviet countries, but Uzbek is the main language in Uzbekistan.

In my region in Afghanistan, we call these kind of breads "Kulchay" and yes, they're Uzbek breads but just different kinds, but has the same shine. Uzbek cuisines are a blessing and am proud to have Uzbek as one of our people in Afghanistan. Manana Uzbeko Wrono! ❤️ 🇦🇫

From Kyrgyzstan, we also make bread like this, but the Uzbek bread will always be my family's favOrite one. We always buy from uzbeks cuz we know, this will make the dinner tastier (in central Asia almost everything is eaten with bread) 🇰🇬❤️🇺🇿

I worked as a Peace Corps volunteer in an Uzbek region in southern Kazakhstan and got to visit Uzbekistan periodically. (This is between us as Peace Corps still doesn't know xD). The breads vary, too, by region. The Samarqand bread has an interesting shape and I love the manpa - it's called a chekha in Kazakhstan. They are very special. Bread is, or was when I was there, is considered sacred but that might have been also because of the large number of people who remember the horrible famines and deaths that resulted quite a few times during the Soviet era or heard these stories from their relatives. If bread fell on the ground, Uzbeks would swiftly pick it up, press the fallen loaf to their heart then lips and utter a prayer. I accidentally dropped a round loaf and an elderly man hurriedly picked it up and did this before handing it back to me. I later asked my colleagues about this and was told it was an old custom owing to the importance of bread and wheat, as bread is referenced throughout the Old Testament. I am well-traveled but I'd never seen this custom elsewhere

I bought that fabulous bread in the market in Samarkand! It is famous in the area, everyone in Tashkent asked us to bring back loaves for them. Samarkand is one of the most beautiful, most interesting cities in the world.

If I remember correctly, bagels are briefly boiled in a mixture of water+baking soda (sodium bicarbonate) for some time, and I think they are allowed to dry a bit, prior to baking.

Bagels taste a lot better imo. These are a bit dryer and appeal to older folks to eat with soup. There’s an Uzbek bakery/restaurant in front of the office where I work, the Russian/Jewish people would buy 1 of these a day. They are massive.

That’s surprising that I accidentally found this channel! I’m from Uzbekistan, but Tashkent. You know that it’s impossible to bake this bread in another region of Uzbekistan. Maybe it’s due to Air in Samarkand, but only there we can enjoy this unrepeatable taste! Upd. This style of the bread has Samarqandi style but the round loaves, with some style and ingredients variation, are all over Uzbekistan. Everyone outside the cities has their own tandoor and bakeries exist in all the cities. Even in southern Kazakhstan where there is a huge Uzbek community. Uzbeks don't really leave their neighborhoods. But if you travelled around your country, everyone eats this type of bread. There is no Atkins diet in Uzbekistan and that's a good thing

When I went to Tashkent, I ate a lot of this bread! It was delicious! The markets are a great experience, and the produce are fresh!

i used to live around the corner from a bakery with a huge old-fashioned wood oven. they were open 24/7, and i would often stop in during the very early hours of the morning when they were making breads and thousands of bagels to be delivered to cafes around town for that morning's meal. i used to go for long walks late at night, just so i had an excuse to be there at that time. looking at this video reminds me of all those walks. i can almost smell the loaves through the screen. they even look giant bagels.

I went to Georgia, a neighbor of Uzbekistan and Armenia, they had ovens like this and it was part of our itinerary where we will bake it like how the locals do it. It was difficult, it is also hot, mine didn't stick it fell several times. I had to knead the dough again, the old lady came over and helped me and it finally sticked to the oven and we waited until it was cooked and we ate it. It was so nice. ❤

I was in Samarkand and this is really incredibly tasty. Another gastronomy brilliant is a pilaf which is called osh. It is amazing.

I have been to Samarkand in Uzbekistan a few times, it is a beautiful place the Blue Mosque is beautiful the whole area next to it as well, the Uzbek food is really tasty the people are nice definitely a place to go make sure you visit the Market whether you are in Tashkent or Samarkand ! 😉

@@shomurotoff2589 A doc on plov would require visiting different regions in Uzbekistan and even southern Kazakhstan where there is a large Uzbek community. Each region makes their own kind of plov. It would be a great food feature

@@thesoupiestsoupster9019 so plov is kinda like a version of pilaf, based on meat, carrot and cumin. Lagman is a noodle dish with bright flavors, also with meat and bell peppers. Shishlik is basically BBQ skewers fried over charcoal. Orolma is sort of like a steamed dumplings, but in a roll. Usually made with pumpkins and meats. Their food is simple but there is something amazing about it, I’ve been in Uzbekistan and it was one of the best foods I have ever eaten.

Hell yeah. While theres better technology now, a modern version of a tandoor exist as well! Safer and sturdier! However it won't smell like the traditional stone version ones.

As an Italian I admire and love everything that is multi-ethnic cuisine! I really appreciate Arab bread and those from other countries, I love multi-ethnic food but I would like to say one thing ... All sweaty, without gloves, without cap, without apron, in Italy we work in almost septic environments for things to eat, the European community prohibits working without certain levels of cleanliness and prevention to work the food at its best

Never had a problem with tandoor bread made by icky oocky normal people without 60 layers of protective measures put on them and the environment. Not having meat or fat in the food makes it way safer just by itself + high heat (avg temperature of 400 Celcius) helps.
