One thing that I like and amazed by these restaurants is how the relationship between the chefs and the vendors is so closely related.

Having a good relationship with your suppliers is always good business but i think it's nice to just make friends with people in different branches of a similar field. You get a lot of insight to what's what from each other

In France, Spain and Italy some of the best chefs will wake up very early in the morning and will go directly to the specialty markets to get the first catch of the day, fresh produce, etc etc

Watching this series always makes me appreciate the craft in cooking more. All the chef's hard work and passion can truly be seen in their dish and It also teaches me a lot about the world of cooking that I have never seen, I really appreciate the series

Most all chefs at this level have an Instagram to follow nowadays. I'm finding the differences in their presentation there to be stark where you can see the truly creative ones vs the ones just aiming to meet a standard. Nothing wrong but the schools of thought are important to contrast.

Compared to a lot of the chefs I've seen on this channel, I absolutely love Mary's energy! She is humble, driven, efficient, and best of all: compassionate. I loved the part of her interview where she said she's not a person who responds to yelling, what a great attitude! She deserves all the success this world has to offer. Much love!

Legit question. As a chef how hard do you judge or how critical are you when you go to other places? Can you sit and enjoy without picking it apart?

@@corymccarron7587 depends on the situation. I stay pretty calm now, but 10 years ago I’d pick things apart and over analyzed to the point that I couldn’t enjoy myself.

I absolutely love this series and this particular one might be my favorite. Seeing women leading the kitchen, folks showing the utmost respect for each other, and great food. These are the kitchens people need to see and highlight.

Must go as the best michelin star restaurant so far: clean, normal dishes without strange garnishing that doesn't add anything, combined with a chef that really lifts the spirits. Immaculate!

Incredible how skilled the pastry chef is, but also how calm everything is - I think it's great to be well away from the shouting and screaming of old style kitchens - this food looks as good as anything made in the past and done under good conditions.

That looks like a pretty happy kitchen: where the owner does a waiter job, wine director has a tasting part and chef does the shopping. Would love to be involved in such a project. Oh what a nice vibe 😉

To me it showed so much leadership between chef and owner, When the chef was talking about it being being busy and finished the day and the owner just looked at her shook her head and looked away. 🥸

She’s such an amazing boss!!! The VIP was a waiter who works at that restaurant so gets a free meal but as a VIP I would be so over the moon if I had a boss like that haha

This is superb. I love how she delivers gold standard food but at same time leading by example and treating all her team with respect. You get the impression the team has fun and has the support of the owner.

I’m in the cooking business, I’m the number 2 in the kitchen. I cannot do what these guys do. I respect the patience and experience these guys have against regular line cooks. I like the kitchen I work in but the industry is truly tough. That just makes me like it over again with these videos.

I loved this video, it seems almost like a cartoon or a tv show, a lot of high end kitchens seems to be so chaotic, there are some videos were it hard to watch the chefs knowing they are probably destroying their life’s due to their career, I’m not sure this isn’t the case here but the world that is shown in this video seems more tranquil, at least to me.

Chefs are known for being volatile and transferring that negativity to their staff. I've never wanted food prepared with that energy. Her demeanor should become the professional standard.

Chef: *makes pasta with raised edges resembling a cup shape to hold roe as seen in finished product* Owner: "i would like to have a better pasta that can hold all that beautiful roe." The chef seems like she is incredibly knowledegable and very skilled at her job. Unless i misunderstand what the owner is talking about, it seems like she isnt.

This was great watching a professional kitchen working together so well. You have a great team chef. I have one more thank you for you chef. Thank you for saying your using a cure on the mackerel instead of saying " dry brine". I'm so sick and tired of saying dry brine, like it's some sort of new technique. It's just only a technique that's been around for a couple of thousand years, curing that is. So thank you for speaking to truth. Cures can be great. Death to " dry brines". ( OK, I went a little overboard on the D B stuff. I'm not a perfect man.) 😄👍

I’m always amazed how the Chef reads off the order, 4,5,6 different items, everyone listens, replies “yes”, and then they all know what their responsibility is, and how how how is it all done at the same time?!? a well run kitchen is like a beautiful dance and definitely an art form, I love these videos.

This Chef's conduct should become the professional standard for restaurants. Volatility and abuse are rampant in kitchens and this needs to be regulated. Chef Attea proves a successful kitchen can be run without all the aggression and misconduct commonplace in most restaurants.
