That's actually a really wise decision, as far as choosing the right brain jar container goes, the importance of maintaining optimal freshness in your jar brain can never be overstated. When it comes to being a superior choice over plastic, it's a.....(wait for it)......"no-brainer"! .................... ... ................. ........ ................................................. .................Plastic can give off toxins and leave the brain with a plasticky aftertaste. So before getting back to the monastery, Bib as a spider somehow managed to get somewhere with a captive to have his brain from the spider put into another body while that brain was put into the spider. Where was it done, who performed it, how was Bib able to arrange it since he smuggled himself back to Tatooine and had no resources. And just because you've undergone surgery, even if you've studied the procedure doesn't mean it wouldn't take years of training to know how it is done. It seems to a fairly routine procedure for the monks, though. Every rich old dude is going to want to get his brain put into a younger body. It's not something that can really be kept secret. I dunno, seems like a lot of holes here.

Maybe I didn't understand the video, but it seems that when the fat twilik fell and Fortuna in droid form was waiting he performed the surgery himself somehow. Then they got the palace and simply asked the monks for medical aid for basic wounds.

Unsure, eventually (I think) the brain itself will start to decay once out the spider droid because all brains decay due to use. He could go on for a long time but I don't think it's indefinite. His best option is to now transfer his essence into a droid and live on that way. (Yes in legends that's possible.)
