It's different because that is their specialty. Most chapters are generalists and not just target specific groups of enemies.

Not much difference to be honest except that the DeathWatch hone Xenos purging to a fine point then any other Astartes. Like DeathWatch specializes in main killing Xenos. Astartes yes do kill Xenos but they also have many other duties like taking and reorganizing lost planets and other stuff. Astartes also have their own cultural where DeathWatch doesn’t because they being made up of various Astartes from all of the different Chapters. I believe DeathWatch is the only Astartes that uses the mutagen virus bomb against Tyranids.
